Let’s talk about microwave meals. I’m not talking about the ones you buy in the freezer section at the market. I eat those for lunch often enough. I’m talking about making your own microwaveable food and meals at home. Why am I even thinking about this? Well, a few months ago we renovated the kitchen. A job that was supposed to take less then a week ended up taking 3 weeks. It was crazy, I was angry, and I did not have a stove or a sink. I was pretty much left with a microwave.
While I like using my microwave and I often have a frozen meal for lunch, it gets old after a week or so. I turned to friends, fellow bloggers, and Pinterest to see if I could find any microwave meals that I could make from scratch. I was surprised that there are a ton of recipes out there for microwave cooking from scratch. I found a handful of ones I wanted to try and I got to it. I’ll be sharing a few of them this summer when it’s too hot to use the stove all the time.
The first one I tried was Microwaveable Macaroni and Cheese. I was a little skeptical about this because not only do you make the cheese sauce in the microwave but you cook the noodles in there as well. I put the noodles in the microwave and cooked them. With the except of it boiling over one time this was an easy step. I then mixed together all of the cheese ingredients, poured them in the mug, and cooked them. When it came out I was surprised that the macaroni and cheese looked smooth and pretty good.
I sat down at the dining room table to enjoy my microwaveable meal. I was surprised that it was actually pretty good. It was definitely better then the prepackaged mac and cheese that is microwaveable. It’s was creamy, cheesy, and the noodles were al dente. All in all it was pretty darn good.
Now for the real question…would I make this again? The answer is I would make it again. It was nice to make a single serving because I was home by myself and it only took minutes to make. It didn’t heat up my kitchen and it would be a great recipe to use if I was in a hurry.
- 1/3 c. macaroni noodles
- 1/2 c. water
- 1/3 c. cheddar cheese, shredded
- 1 Tablespoon milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Place the macaroni and water in a large mug. Place in the microwave for 6 minutes. Stir every 1 minute 30 seconds. Watch it while it cooks as it may boil over.
- After 6 minutes there will be a little bit of water left in the mug, leave it there.
- Mix in the cheese. Microwave for 30 seconds.
- Remove from microwave and stir in the milk, salt, and pepper.
- Serve hot.
