Winter this year was cold and snowy.ย  I’m so thankful that we are on the way to warm weather and spring!ย 

With St. Patrick’s Day on the way I’ve been working on my menu.ย  I already know what we’re having for dinner but I’ve been looking into dessert options.

I already have a great collection of St. Patrick’s Day desserts.ย  Green Velvet Cupcakes are a fun and tasty dessert. For an easy to make dessert this Mint Chocolate Chip Cookie Dough Dip can be enjoyed with cookies, graham crackers, fruit, or other sweets.ย  When I have extra Girl Scout Cookies I love these Thin Mint Stuffed Cookies.ย 

I recently made Oreo pops for Valentine’s Day.ย  They were pretty popular so I thought I’d make another round for St. Patrick’s Day.

What is an Oreo Pop?

An Oreo pop is a sweet treat that is made by combining Oreo cookies with a lollipop stick and coating them in chocolate or candy melts. They are a popular dessert item for parties, events, or as gifts.

Before making the pops I needed to figure out what color to make them and how to decorate them.ย  I ended up using green candy melts.

I then picked up some gold sprinkles to go on top of the Oreos.ย  I figured it would be the gold that’s at the end of the rainbow.ย  You could also use rainbow colored sprinkles or drizzle gold or yellow candy melts on top.ย 

What can I use to decorate the Oreo Pops?

The easiest thing to use to decorate is going to be festive sprinkles.ย ย  You can also use gold sprinkles like I did. You could also sprinkle with nuts, crushed toffee, or crushed Oreo pieces if you don’t care about sticking to a certain color.ย  Another option is drizzling in different colored chocolate or candy melts.ย  The possibilities are endless!

I used regular lollipop sticks in the Oreos.ย  I was very gentle and every single Oreo broke.ย  I simply pressed down on the Oreo’s and the cream held the stick in place until I had dipped the Oreos.ย  If you can get the stick in there without breaking the Oreo cookie more power to you!

Ingredients for making chocolate covered OREO pops.

Ingredients:

  • Oreo cookies (I used original Oreo’s but you can use different flavors)
  • green candy melts
  • gold sprinkles
  • colored candy melt for decorating (this is optional)

To make the Oreo pops place a lollipop stick in the middle of each of 24 Oreo cookies.ย ย  Lay a piece of parchment paper on a table to lay the dipped Oreo cookies on.

Melt the candy melts in a microwave safe bowl in 20-30 second intervals, stirring after each heating, until the candy melts are melted.ย ย 

Carefully dip an Oreo into the melted candy and tap off the excess.ย ย  Place on the parchment paper and sprinkle with sprinkles if desired.ย  Repeat with remaining Oreo cookies.ย ย  Allow to harden at least 15 minutes.

These turned out really cute!ย ย ย  The gold sprinkles worked well with the green candy melts to convey the St. Patrick’s Day vibe.ย  I also did some with green St. Patrick’s Day sprinkles and while I liked those I thought the gold sprinkle ones looked better.

I love that you can change the colors of the candy melts and type of sprinkles for any holiday or event.ย  They are fun to put in a vase as an edible gift or centerpiece or you can wrap them in a plastic baggie and tie with a colored ribbon.

How do you store Oreo pops?

Store Oreo pops in an air tight container for up to 3 weeks.ย  Do not refrigerate them as that can cause streaking in the candy melts.ย

St. Patrick’s Day Oreo Pops

Ingredients

  • 24 Oreo cookies
  • 1 cup green candy melts
  • gold sprinkles

Instructions

  • Carefully place a lollipop stick in the middle of each Oreo. If the cookie breaks, gently press the cookie to the stick to make sure it holds together.
  • Place a piece of parchment paper or waxed paper on a table to place your dipped Oreo cookies on.
  • Place the candy melts in a microwave safe bowl. Heat in 20-30 second intervals, stirring well after each heating, until it is completely melted.
  • Take an Oreo pop and dip it into the candy melts, coating the cookie completely. Gently tap off the excess candy melts and place on the parchment paper. Quickly pour gold sprinkles on top of the Oreo.
  • Repeat with remaining Oreos.
  • If you want to make a drizzle heat another color of melts or chocolate in a microwave safe bowl then pour in a zip top baggie. Snip off the end and drizzle over top of the Oreo pops.
  • Allow pops to harden for 15-20 minutes
