Hot Spinach Parmesan Dip #SundaySupper

     Today is a very special day!  It's #SundaySupper's first birthday!  That's right, #SundaySupper has been rolling for an entire year!  I am so grateful that I saw Isabel's post about this wonderful group one day and quickly decided to join.  Not only are we a great group of foodies, we've become a great group of friends.  I even got to meet a few of the ladies at MixedCon in November!

     For the very special #SundaySupper birthday we were each asked to pick a recipe that someone in the group posted during one of the events of the past year.  I had a very difficult time picking out my recipe because I've pinned so many of them!  I mean, have you seen some of the incredible dishes this group has made?

     I finally decided on Hot Spinach Parmesan Dip which was made by Patricia of Comfy Cuisine.  This dip is creamy, cheesy, and delicious.  It's also fairly easy to put together if you have company coming over.  I like the addition of four different kinds of cheese, it really makes this dip something special.  Of course having the spinach added in also makes me feel like I'm eating semi-healthy.

Hot Spinach Parmesan Dip (adapted from Comfy Cuisine)
2 t. olive oil
1 onion, chopped
3 garlic cloves, minced
2 (10 oz) packages of frozen spinach
1/4 c. milk
8 oz. cream cheese
1/2 t. Worcestershire sauce
3/4 c. freshly grated Parmesan cheese
1/4 c. freshly grated Pecorino Romano cheese
1 c. shredded mozzarella cheese
1 t. black pepper
1 t. paprika

1.  Preheat the oven to 425 degrees.

2.  Heat the oil in a large skillet over medium heat.  Add in the garlic and onion and saute for 5 minutes or until lightly browned.

3.  Meanwhile thaw the spinach in the microwave and squeeze out the excess water.  Add the spinach to the onion mixture and cook for 2-3 minutes.  Remove from heat.

4.  In a large bowl combine the milk and cream cheese.  Add the spinach mixture and mix until smooth and creamy.

5.  Add in the Worcestershire sauce, Parmesan, Pecorino Romano, mozzarella, pepper, and paprika.  Stir to combine.

6.  Spray an 8 x 8 baking dish with cooking spray.  Pour the dip into the pan and heat for 20 minutes or until it begins to bubble and turn golden brown.

7.  Serve with crackers, tortilla chips, or baguette slices.

  13. I love spinach dip to begin with, but warm spinach dips are all kinds of amazing and comforting. I'm going to keep this one for the Super Bowl (or a night in with some Netflix!)
