Looking for a fun St. Patrick’s Day treat that’s easy to make and totally tasty?   My Lucky Charms Treats combine Lucky Charms cereal, marshmallows, and butter for a gooey and delicious snack!  This recipe was originally posted in March 2015.

St. Patrick’s Day is almost here and I’ve been working on a few treats for the holiday!  When I started looked for treats much of what I found was chocolate and mint since it has the green color.   While I’m a huge fan of chocolate and mint, I like to find treats that don’t have chocolate in them as my brother can’t have chocolate and I never want others to miss out on a treat because they can’t have chocolate.

After searching for non-chocolate St. Patrick’s desserts it seemed as though there were two things that came up.   There were plenty of rainbow themed desserts and then there were desserts with Lucky Charms in them.  Now why didn’t I think of that?

The one that caught my eye was these cute Lucky Charms Treats because I knew I could take them to school and the kids would love them.  They were simple, they had familiar ingredients, and they looked fun.

For this recipe you will need:

  • Lucky Charms
  • marshmallows
  • butter
  • sprinkles (optional)

To make the treats I simply heated the butter and marshmallows in a large pan on the stove.  Try to use mini marshmallows as they melt a lot quicker.  I actually used giant marshmallows and it took forever to make.  The plus side is that my butter browned and gave these treats an extra special taste.

After the marshmallow and butter have melted and are mixed together I removed them from the heat.  Then I quickly mixed in the Lucky Charms. Work quickly so that the marshmallow doesn’t harden.

Pour them into a greased pan and press into the corners.  If you are using sprinkles quickly sprinkle them on now.  I used gold sprinkles because I thought it was a cute touch for St. Patrick’s Day but you could also use rainbow sprinkles or just green sprinkles.

These treats turned out great.   They were sweet, crunchy, and fun to eat.  I loved the double marshmallow flavor in them and the kids enjoyed taking a bite, then picking out a favorite marshmallow, then taking another bite.   These were a huge hit!

Lucky Charms Treats

Yield: serves 18
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • 4 Tablespoons butter
  • 2 c. mini marshmallows
  • 6 c. Lucky Charms
  • green and gold sprinkles

Instructions

  1. Spray a 9 x 13 baking dish with cooking spray and set aside.
  2. In a large saucepan over medium heat melt the butter and mini marshmallows. Stir frequently until they have melted are are well combined.
  3. Remove the saucepan from the heat and add in the Lucky Charms. Quickly stir until the cereal is combined with the marshmallows.
  4. Pour into the prepared pan and press down lightly to even it out.
  5. Quickly pour on the sprinkles.
  6. Allow the treats to harden for 15 minutes then cut into 18 squares and enjoy!
