Mashed Cauliflower with Parmesan

I am in a side dish rut.   I have a hard time switching up our side dishes and vegetables during the week.   We don’t really like sweet potatoes so that isn’t an option, I’m not a big fan of asparagus so we can only have that so often, and there are several other vegetables that either my husband or I don’t really like.  I also like to make simple side dishes with only a handful of ingredients.  That’s why I can’t wait to see what everyone is cooking up for our Five Ingredients or Less Sunday Supper theme this week.

Cauliflower Mash with butter and Parmesan cheese

One side dish we always have is some version of potatoes.  I make mashed potatoes, baked potatoes, and french fries several times a week.   I love potatoes so it’s not that big of a deal but potatoes are very starchy and after a while I’d like something a little different.

Mashed Cauliflower

I’ve seen many recipes for mashed cauliflower and I keep pinning it and looking at it but I just haven’t gotten around to making it…until now.   I finally bought a head of cauliflower and was determined to make this mashed cauliflower side dish.   I’ve heard people say it tastes a lot like mashed potatoes but it’s a little firmer.  I was game for trying it out.

The recipe is very similar to mashed potatoes.   It has cheese, cream, butter, and pepper.   Instead of the potatoes it subs in cauliflower.   It sounded easy enough.  I boiled the cauliflower in the water and drained it.   I had some trouble mashing it.   It was harder to mash then potatoes and I really had to use so strength to do it.

Once the cauliflower was mashed I added in the remaining ingredients and whipped it all together.   It was easier to finish mashing the cauliflower once I had the cream in the bowl.   It ended up being really good.  It was firmer then mashed potatoes but it had great flavor and was better for me then mashed potatoes.

Mashed Cauliflower with Parmesan

Yield: serves 4
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

A great way to switch up traditional mashed potatoes, substitute healthier cauliflower in its place!

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1/2 c. Parmesan cheese, shredded
  • 1/3 c. cream, half and half, or milk
  • 3 Tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Pour 2 cups of water in a large saucepan and add in the cauliflower. Bring to a boil. Cover and cook for 15 minutes.
  2. Drain the cauliflower, pour into a bowl, and mash.
  3. Add the cheese, cream, butter, salt, and pepper. Stir until well combined.
  4. Serve with addition cheese or sprinkle with parsley.

  1. We’ve only had mashed cauliflower once, at a restaurant, and we didn’t like it. I’ve really been wanting to try it at home to see if I could make it better but my husband won’t go for it. I’m going to have to try and sneak it into my menu sometimes soon!

  2. I need to test this out on my potato loving hubby! I love cauliflower, so I know I’d be an instant fan—hope he will be, too!
