Chicken Pot Pie (Freezer Meal)

This summer I decided to stock our basement freezer with freezer meals!   I knew that baby boy would be due at the end of August and that I might not have a whole lot of time to cook once he was here.   I started in early July and began preparing freezer meals that had enough in them for at least two meals.

This chicken pot pie tastes great and can be frozen ahead of time!

I made a lot of slow cooker freezer meals.  They are easy to make and it’s simple to put them in the slow cooker in the morning then enjoy them whenever we are hungry.  However, we don’t always want slow cooker meals so I was looking around for other meals as well.

I found a recipe for Chicken Pot Pie that could be frozen.  It made 2 pot pies which was perfect.  I had already made biscuit mix which I thought would compliment the pot pie perfectly.  I went to the store and grabbed all of the ingredients.   While it did use one bag of frozen vegetables everything else was fresh.

My favorite part of making homemade chicken pot pies is to make the gravy from scratch.  I do not like “gravy” that is made from creamy condensed soup.  There’s way too much sodium in those and it’s not hard to make a simple gravy.  So I whipped one up from scratch.

One thing that I didn’t make from scratch was the crust.  While homemade crust is delicious I thought a refrigerated pie crust dough would be just fine.   I also thought it would probably hold up better being in the freezer.

I bought 2 foil cake pans from the market to put the pot pies in.  I was going to buy pie pans but the disposable foil ones are so small and I knew they wouldn’t hold too much filling so I went with the cake pans.   They ended up being the perfect fit.

In order to make these pot pie I simply cooked the filling and the gravy and put them in the pot pie crust.  I did not cook the pot pies at all.  I wrapped them in plastic wrap and then in foil and put them in the freezer.   They freeze well this way for up to 6 months.  Then I simply put the heating instructions on a piece of masking tape and stuck it on the foil.

Chicken Pot Pie (Freezer Meal)

Total Time: 1 hour 50 minutes

Mix up a delicious vegetable and chicken filling along with a homemade gravy, pour it into a prepared crust, and then freeze until ready to enjoy a Homemade Chicken Pot Pie!

Ingredients

  • 1 lb. chicken, cut into 1 inch pieces
  • 1 lb. frozen mixed vegetables (corn, carrots, peas, and beans)
  • 2 potatoes, peeled and diced
  • 3 Tablespoons butter
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2/3 c. flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 2 c. chicken broth
  • 2 c. milk
  • 4 refrigerated pie crust doughs

Instructions

  1. In a large pot combine the chicken, frozen veggies, and potatoes. Add one cup of water and bring to a boil over medium high heat. Boil for 15 minutes, remove from heat, drain, and set aside.
  2. In a large saute pan melt the butter over medium heat. Add in the onions and garlic and saute for 5 minutes.
  3. Stir in the flour, salt, pepper, and oregano to form a paste.
  4. Add the chicken broth a half cup at a time, stirring after each addition, until a thick gravy forms. Stir in the milk and bring the mixture to a boil, stirring constantly, until it thickens.
  5. Remove from heat and set aside.
  6. Place one pie crust in each of two pie or cake pans.
  7. Add the chicken and vegetables to the gravy and mix well. Allow to cool to room temperature and then pour half of the gravy mixture into one pan and half into the other.
  8. Place a pie crust on top of each pot pie and press the edges together to seal. Cut 2-3 slits in the top of each crust to allow venting while cooking.
  9. Carefully wrap each pot pie in plastic wrap and then in foil. Freeze for up to 6 months.
  10. Take a piece of masking tape and write the following directions on the tape: Preheat the oven to 375 degrees. Take the pot pies out of the plastic wrap and foil then place in the oven. Bake for 75 minutes or until the crust is golden brown and the filling is bubbling.

  1. Made this and loved it! I will use chicken thighs in the future simply because I like them better for flavor, but this was a great meal to have and also freeze. I baked a fresh, unfrozen one for 60 minutes and it was perfect.
