The end of the school means standardized testing.  While most teachers have testing for a week or so, I end up with 3 to 4 weeks of testing because I’m a special education teacher and have testing with all of my grade levels.  Usually my instructional assistants are the ones who help me during testing but this year I had some other teachers helping.

During the science testing my friend and colleague Leslie was working with me in my classroom.   Being the the kind person she is she brought in treats for my students for when they were finished testing.  I also tried her treats and couldn’t get enough of her Snickerdoodle Bars!

A week or so later we had a snow day so I texted her to see if I could get the recipe.   When she sent it to me I immediately preheated the oven and got baking.  The recipe was simple and I had all of the ingredients on hand.

Because of the spices it smelled amazing while baking in the oven.  I couldn’t wait to take it out and eat it!   Once it was finished I let it cool for about 15 minutes and then my husband and I tried them.  They are so good!   They have the cinnamon sugar flavor of snickerdoodles and are soft and chewy.  The ones I made were really good but Leslie’s were even better.  I’m not sure what the difference was but they were still awesome.

My husband and I each ate several of these Snickerdoodle Bars and thankfully I had school the next day so I could take them in to work.   Otherwise we may have eaten the entire pan!  This is one cookie bar you don’t want to miss out on.

Snickerdoodle Bars

Total Time: 45 minutes

Turn those traditional snickerdoodle cookies into a soft and chewy cookie bar!

Ingredients

  • 2 2/3 c. flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 c. brown sugar, packed
  • 1 c. butter, melted
  • 2 eggs
  • 1 Tablespoon vanilla
  • 2 Tablespoon sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350 degrees. Spray a 9 x 13 pan with cooking spray.
  2. In a medium bowl combine the flour, baking powder, salt, cinnamon, and nutmeg. Mix well and set aside.
  3. In a large bowl cream together the brown sugar and butter. Add in the eggs and mix well. Stir in the vanilla.
  4. Add the flour mixture to the butter mixture and mix until blended.
  5. Spread batter into the prepared pan.
  6. In a small bowl combine sugar and cinnamon. Sprinkle over top of the bars. Bake for 25-30 minutes.
  7. While still warm cut into squares.
