I can't get enough of this Apple Pie Granola!

My husband and I are pretty simple people when it comes to breakfast.   We are happy with a cup of yogurt, a bowl of oatmeal, or a piece of toast.  It doesn’t take much to get us going in the morning besides a cup of coffee.  Coffee is always a must.

Apples, applesauce, oats, and Imperial Sugar make up this tasty Apple Pie Granola!

One thing I like to do to give our morning breakfast a little bit of pizzazz is to make homemade granola.  My regular granola recipe is basically just oats, some type of nut, honey, brown sugar, some type of seeds, and spices.   It’s super easy to make and I basically just use whatever I have in the house.  I rarely go out of my way to buy ingredients for granola.

Apple Pie Granola

On occasion I do make different flavors of granola.  Since it’s fall I thought Apple Pie Granola would be awesome.  Putting all the flavors of a pie into my traditional granola recipe sounded delicious.   Then my husband and I could use it on top of our morning yogurt.

This recipe is a little different my other granola recipes because it uses fresh fruit.   I actually cut up an apple and put it in the granola.  Instead of honey I used Imperial Sugar and coconut oil.   Then I added in apple pie spice.  If you don’t have apple pie spice you can use a combination of cinnamon, nutmeg, and cloves.  Then I finished it off with vanilla and Imperial Sugar Light Brown Sugar.

I was hoping that even though there were fresh apples in the granola that it would still come out crisp and golden brown.  My entire house smelled like an apple pie while it was baking.  In fact, my husband came home while I was in the middle of baking it and he thought I had a pie in the oven.  He was pretty surprised to find out it was homemade granola in there!

The granola came out of the oven golden brown but soft.  It smelled like spices, apples, and nuts.  I let it cool for about 30 minutes and found that it did firm up.  It’s not as firm as the granola I usually make but it does have the texture of granola.   It tasted amazing on top of vanilla yogurt for the perfect easy fall breakfast.  I’m pretty sure kids would love to have this granola on their yogurt before they head off to school.

In addition to eating it on our yogurt my husband and I also enjoyed it as a snack.   A handful of this granola satisfied my after dinner sweets craving in a much healthier way.  The nuts add a nice crunch while the spices give it a ton of flavor.   So if you need an easy breakfast or snack this fall give my Apple Pie Granola a try!

Apple Pie Granola

Yield: 5 cups
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes

Give your morning granola a boost with fresh apples and spices perfect for fall!

Ingredients

  • 3 c. rolled oats
  • 1 c. nuts, chopped (I used almonds)
  • 1 Tablespoon apple pie spice (or 2 teaspoons cinnamon, 1 teaspoon nutmeg, 1/2 teaspoon ground cloves)
  • 1 teaspoon sea salt
  • 1 apple, diced (I left the skin on but you can peel it if desired)
  • 1/3 c. coconut oil, melted
  • 1/2 c. applesauce
  • 1/4 c. granulated sugar
  • 3 Tablespoons brown sugar

Instructions

  1. Preheat the oven to 350 degrees. Line a baking pan with parchment paper or a silicon baking mat. Set aside.
  2. In a large bowl combine the oats, nuts, apple pie spice, salt, and apples. Mix well and set aside.
  3. In a small bowl combine the coconut oil, applesauce, granulated sugar, and brown sugar. Mix well.
  4. Pour the sugar mixture over top of the oat mixture and mix well to combine. I ended up using my hands to mix it together.
  5. Pour the granola onto the prepared baking pan. Spread it out in a thin layer.
  6. Bake for 1 hour, stirring every 15 minutes.
  7. Remove from oven and allow to cool for 30 minutes. Break into pieces and store in an air tight container for up to 1 week.

*If granola gets soft you can put it in the oven at 400 degrees for 5 minutes to crisp it back up*
