The last few weeks at work have been surprisingly rough.  It’s not that I’m having problems with behaviors because for the first time in years I don’t have any students with behavior problems.  No, my problem this year is that I just can’t get anything done.  I feel like I’m so far behind and it’s really stressful.

I have to plan for 5 groups a day, I have a lot of paper work to get finished, and I just can’t keep up.  I’ve actually been bringing home some of my work and doing it which I haven’t had to do in the past.   All that to say at the end of the day sometimes I like to have a cocktail and relax.

Before J was born I made a lot of cocktails.  It wasn’t unusual for me to make one or two different cocktails during a weekend to try and find one that I really liked.   I haven’t done that in at least a year but since I received a fun box of Freaky Fruits from Melissa’s Produce I knew I wanted to make at least one cocktail with these fruits.

EVerything you need to make a Blood Orange Mule

After going through the box I picked out a few passion fruit and a blood orange.  I thought the tart flavor of the passion fruit would work well with the sweet blood orange and they both have a tropical feel so it was perfect.  I just needed to figure out what type of cocktail to make.

After searching my mixer options I decided on a Blood Orange Passion Fruit Mule.  I’ve been loving mules for the last few years and since I had ginger beer in the refrigerator I thought it would be great with these fruits.   I whipped up a quick simple syrup and mixed it with the pulp and seeds from the passion fruit, the juice from the blood orange, and some fresh lime juice.  I just happened to have some blood orange vodka as well but orange vodka would work as well.

I mixed it all together and divided it into two glasses filled with ice then topped it off with the ginger beer.  The color of this cocktail is really pretty.  It’s a pinkish orange color and has the passion fruit seeds floating in it.  The taste is amazing!  It’s definitely tropical but it has a bit of sweetness and a bit of tartness mixed with the flavor from the ginger beer.  This is an awesome cocktail that’s basically perfect any time of year!

Blood Orange Passion Fruit Mule

Yield: serves 2
Prep Time: 5 minutes
Total Time: 5 minutes

A sweet and tart cocktail that will brighten anyone's day.

Ingredients

  • 3 Passion Fruit
  • 1 Blood Orange
  • 1 lime
  • 2 Tablespoons simple syrup
  • 2 oz. blood orange vodka (or just orange vodka)
  • 12 oz. Ginger Beer

Instructions

  1. Cut open the passion fruit and put the pulp and liquid in a cocktail shaker. Cut open the blood orange and squeeze the juice into the shaker. Cut open the lime and squeeze the juice into the shaker.
  2. Add the simply syrup and vodka to the glass. Shake for 30 seconds.
  3. Fill two tall glasses with ice.
  4. Divide the fruit and vodka mixture between the two glasses.
  5. Top each glass with 4 to 6 ounces of ginger beer.
  6. Garnish with a slice of lime.
