Beer and Lime Marinated Flanken-Style Short Ribs

Last month I had the opportunity to go to Cleveland, Ohio and hang out with a group of food bloggers to learn more about Certified Angus Beef brand.   I’ve been to their culinary center several times and always have a great time and learn a ton.

This time around was no exception.  We went to several amazing restaurants, learned how to butcher our beef, had a cooking competition, and even went to a farm where they raise Angus cattle.

These Beer and Lime Marinated Flanken Style Short Ribs are awesome on the grill!

During a grilling session with Chef Michael he brought out these thinly sliced short ribs.  I immediately became excited because I had just bought these same ribs the week before at my local Weis Market.

They were calling them grilling short ribs but I’d never seen them before.   Chef Michael told use they were Flanken-Style Short Ribs and were great for grilling.

I asked if I could help him cook them since I was dying to know how to make them.  Turns out these are about the easiest short ribs I’ve ever made.

All you need to do is marinate them for a few hours and then grill them for a few minutes per side.  Since most short ribs take hours to make I was thrilled to learn about these ones.  They were in a beer and lime marinade and I couldn’t wait to make them when I came back home.

I ended up making these Beer and Lime Marinated Flanken-Style Short Ribs the week I came home.  I couldn’t wait to share them with my husband.

The recipe calls for Mexican beer but I didn’t have any so I just used what we had in the refrigerator and I switched up the spices a little bit but they tasted very similar.   When they came off the grill I cut them in half so they were easier to handle and then we went to town on them!

These ribs have so much flavor to them.  You can definitely taste the beer and lime but they are also a little smokey and a little bit spicy.

We didn’t dip them in anything but I think a spicy BBQ sauce would be good.  These are the perfect ribs for tailgating because they are quick and easy to prepare and people can eat them with their hands.  Plus since there isn’t really a sauce on them there is little to no mess.

Beer and Lime Marinated Flanken-Style Short Ribs

Thinly sliced short ribs on the bone are marinated and then grilled in just a few minutes. No need for silverware to eat these, just pick them up and enjoy!

Ingredients

  • 1 1/2 - 2 pounds Certified Angus Beef brand flanken-style short ribs
  • 2 Tablespoons olive oil
  • 1 small onion chopped
  • 5 garlic cloves chopped
  • 1 jalapeno seeded and chopped
  • 1 Tablespoon salt
  • 1 Tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons black pepper
  • 1/2 c. chopped cilantro
  • 2 limes juiced
  • 1 bottle beer

Instructions

  • Place the olive oil in a medium skillet over medium heat.
  • Add in the onion, garlic, jalapenos, and salt and saute for 3-5 minutes, stirring occasionally.
  • Stir in the cumin, chili powder, and paprika and cook for 1 minute.
  • Remove from heat and pour into a medium bowl. Add the pepper, cilantro, lime juice, and beer. Allow to cool for 15 minutes.
  • Pour the marinade into a gallon sized zip top baggie along with the short ribs. Refrigerate for 3- 12 hours.
  • Preheat your grill to medium high heat.
  • Remove the short ribs from the marinade and discard excess. Pat them dry with a paper towel.
  • Sear the short ribs for 3-4 minutes per side then transfer to a plate and cover loosely with foil for 5 minutes. Enjoy!
