Last summer I had the pleasure of once again going to Wooster, Ohio to visit with Certified Angus Beef brand.   They are awesome hosts and while there we got a chance to do some cooking and grilling with them.  I always find this fascinating because I learn new tips and tricks as well as get some awesome recipes.

One thing I learned about were flanken-style ribs.  I had never heard of them before but I did see them selling them in my local Weis market but I wouldn’t buy them because I had no clue what to do with them.  So what is a flanken-style rib?   Good question.

Flanken-style ribs are ribs that are cut across the bone.  Each piece has three or four short sections of bone with plenty of meat around them.  They are thin and cook very fast.  They are awesome on the grill or in the oven.

After learning about the I bought several packs at the market and got to work.  Initially I made the recipe that we made at Certified Angus Beef but then I started looking for other recipes.  I came across this Korean BBQ Flanken-Style Short Ribs recipe and I couldn’t wait to give it a try.

This recipe starts with a lovely marinade of soy sauce, brown sugar, rice vinegar, and pears which gives them so much flavor.   The first time I tried this recipe I only marinated them for a few hours and they were just ok because they didn’t have a ton of flavor.  I made them again with marinating overnight and they were really delicious!

They only need to cook in the oven for 12-15 minutes so they are a really quick meal.  I served them with a side of rice and a veggie for a complete meal.  The flavor of these ribs is a little bit sweet, a little bit tangy, and definitely had an Asian flare.   I cut each rib in half so that each had 2 bones instead of 4 and we ended up just picking them up and eating them with our hands.

Ingredients

  • 1/2 c. soy sauce
  • 1/2 medium onion grated
  • 3 garlic cloves minced
  • 1 pear cored and grated
  • 1/4 c. brown sugar
  • 1/4 c. rice vinegar
  • 1 Tablespoon sesame oil
  • 1 teaspoon black pepper
  • 2-3 pounds flanken-style beef short ribs

Instructions

  • Combine all the ingredients in a gallon zip top baggie and marinate the beef overnight.
  • Remove the short ribs from the marinade and place on a baking sheet or in a baking dish.
  • Preheat the oven to 400 degrees.
  • Bake for 12-15 minutes or until cooked through.
  • Serve over rice if desired.

  2. I never would have thought of adding pear to a marinade, but I bet it gives these a nice natural sweetness. I can’t wait to give it a try.

    1. It really does! I thought it was going to be weird or overly sweet but it added just the right amount!
