Get ready for me to blow your mind! Did you know that in addition to making chicken wings, fries, and other delicious savory items, you can bake in the Air Fryer? When I was searching for Air Fryer recipes I found several dessert recipes and was surprised that you can actually bake in it!
Since I didn't want to make a huge mess the first time I tried baking I knew I wanted to either do muffins or cupcakes. I figured the cupcake liners would contain the batter so that even if they didn't cook correctly it wouldn't be a mess. I had no idea how they were going to turn out so I thought a sturdier cupcake would work best.
I made these tasty Air Fryer Almond Oatmeal Chocolate Chip Muffins as part of Back to School Treats Week because as a teacher and a mom I sometimes need to grab something for breakfast in a hurry when I'm on my way out the door. Muffins and granola bars are my top pick for this because they are easy to eat on the run and I can load them up with oats, fruit, or nuts so I feel good about them as well.
I made a basic muffin batter as the base of my muffins. Instead of using vanilla to flavor them I used Taylor & Colledge Almond Paste. I like using almond paste because you get a lot more flavor with a smaller amount. Then I added in Flahavan's Irish Rolled Oats to give my muffins some substance and texture. I finished them off with a half cup of chocolate chips. I used semi-sweet but I think bittersweet or even dark chocolate chips would be good in this recipe.
I was able to fit 9 muffins in the Air Fryer. After about 10 minutes I checked on them and was happy to see that they were cooking and browning just fine! At the end of the cooking time they were golden brown and cooked through. The only thing that wasn't great is that they had some odd shapes but I didn't care as I was only making these for our breakfast or lunches.
The muffins were really tasty. They were cooked well and had a light almond flavor with hints of oats and chocolate. These are perfect for mornings on the go, a lunchbox snack, or even as an after school treat.
- 1 c. flour
- ⅓ c. sugar
- ½ c. oats
- 1 t. baking powder
- ½ t. baking soda
- ½ t. salt
- 1 egg
- ½ c. vegetable oil
- 1 t. almond paste
- ¼ c. milk
- ½ c. chocolate chips
- In a large bowl combine the flour, sugar, oats, baking powder, baking soda, and salt. Set aside.
- In a medium bowl combine the egg, vegetable oil, almond paste, and milk. Mix well.
- Pour the liquid ingredients into the dry ingredients and mix until combine. Fold in the chocolate chips.
- Spray 9 cupcake liners with cooking spray. Carefully fill each one ¾ of the way full and transfer them to the Air Fryer.
- Bake at 300 degrees in the Air Fryer for about 15 minutes.
- Remove from the Air Fryer and let cool for at least 5 minutes.
- Store in an air tight container for up to 5 days.
