During the school year my life is totally hectic. I get to work early, go to aerobics or the gym afterwards, and am exhausted by the time I get home. I often eat lunch early and by the time I'm leaving work for the gym I'm worn out. I recently found Life Choice Energy Bars at Walmart and love the burst of energy these protein bars give me. It's so easy to pack a few of these bars in my backpack at the beginning of the week and then eat them as my on the go snacks on my way to the gym! I don't have to worry about it the rest of the week because they just stay in my bookbag and go where I go.
These aren't your average protein bar. The Life Choice Energy Bars combine protein, carbs, and sugars designed to give you an extra burst of energy. They really help me get through those afternoon workouts. They are found in the cereal section at the market and are a nutritious choice for a high protein snack. The energy bars come in two delicious flavors: Chocolate Fudge Brownie and Peanut Butter Chocolate Chip. I usually buy one of each whenever I'm at Walmart because they are affordable and while my favorite is the Chocolate Fudge Brownie bars, my husband enjoys the Peanut Butter Chocolate Chip.
In the summertime these bars are great for trips. If you are going to an amusement park or to watch a sporting event, pack a few in your back and energize yourself after a long day! They easily fit in my purse for a grab and go snack.
Need energy first thing in the morning? I love combining the Life Choice Bars into a delicious protein bar recipe. My favorite protein bar recipe so far is an on the go chocolate covered cherry parfait packaged in a Mason jar. Since my favorite summer fruits are cherries and strawberries, I paired them with the Chocolate Fudge Brownie bars to make an energizing parfait.
On Monday mornings I usually set out a couple of small Mason jars then grab some yogurt, fresh fruit, and the Life Choice Bars. I layered everything together in a jar, screw the lid on, and place them in the refrigerator. They are great for grabbing when I'm late for work during the week and I need a nutritious breakfast that is going to give me the energy I need to get through the day. I simply throw one in my lunch box and go to work. Whenever I'm ready to eat it, I can pop off the lid and enjoy it. Often times I'll eat half for breakfast and then eat the other half of the parfait in the afternoon when I'm starting to get hungry and my energy is dropping.
It's a great pick me up and it tastes delicious too! Who doesn't like chocolate covered strawberries or chocolate covered cherries? My husband enjoys the parfaits as well. I usually go for fruit flavored yogurt in mine but he enjoys vanilla Greek yogurt in his parfaits. Mix and match the yogurt, Life Choice bars, and fruits to make an on the go snack parfait that fits your taste!
- 4 half pin Mason jars
- 4 (6 oz) containers of yogurt (either cherry or vanilla flavor)
- ¾ c. cherries, pitted and cut into quarters
- 2 Life Choice Bars (Chocolate Fudge Brownie energy bars), cut into small pieces
- 4 whole cherries
- Place the open Mason jars on a counter.
- Spoon half of each yogurt cup into each of the jars. Sprinkle with 1-2 tablespoons of the quartered cherries. Place an eighth of the Life Choice Bar pieces in each of the jars.
- Spoon the remaining half of the yogurt cups into each of the jars. Sprinkle with 1-2 tablespoons of quartered cherries. Sprinkle the remaining Life Choice Bar pieces evenly between the jars. Place a whole cherry on top of each.
- Place the life on each of the jars and screw on the lid.
- Put in the refrigerator for up to 3 days.
To make Chocolate Covered Strawberry Parfaits, simply use strawberry yogurt in place of the cherry yogurt and fresh strawberries in place of the cherries.
