Cinnamon Caramel Latte Blondies

When it comes to baked goods I’m a cookie girl. Sure I like eating cakes and cupcakes and brownies but if I had a choice I would almost always pick a cookie. Now I’m not a fan of store bought cookies and just any cookie; I really like homemade cookies. The problem with cookies is that they are a pain to make sometimes because you have to make a batch, bake them, take them out, cool them, and do it all over again 2 or 3 times.
That’s why I like to make blondies. You get all the flavor of a cookie but in a bar. Plus you can make the entire batch in one swoop instead of baking, removing, and baking again. It’s really the best of both worlds and it’s great because blondies are often chewy on the edges and soft on the inside so everyone is happy.
All of that to say, I make a lot of blondies and have a bunch on my blog. So when I was looking for a new blondie recipe I simply raided my cupboards. What I found was everything I needed to make Cinnamon Caramel Latte Blondies. Basically these are a basic blondie recipe with coffee emulsion (or extract), caramel sauce, lots of cinnamon, and caramel chips.
If you have the option go to the coffee emulsion because the flavor of an emulsion doesn’t bake out as much as an extract does. It gives it a subtle coffee flavor that works well with the cinnamon and caramel. I also used all brown sugar because I think that really helps add to the caramel flavor.
These blondies were really yummy. They are sweet with a little bit of spice and a hint of coffee. I like enjoying mine with a cup of coffee or an actual latter. They just work together and they are the perfect treat at the end of a busy day.
Cinnamon Caramel Latte Blondies
Ingredients
- 1/2 c. butter softened
- 1 c. brown sugar
- 1 egg
- 1 teaspoons coffee emulsion
- 2 teaspoons caramel sauce
- 1 teaspoons cinnamon
- 1 1/4 c. flour
- 1 teaspoons baking powder
- 1/2 c. caramel chips
Instructions
- Preheat the oven to 375 degrees.
- In a large bowl cream together the butter and sugar.
- Add in the egg, coffee emulsion, and caramel sauce and mix well.
- Add in the flour and baking powder and mix until combined.
- Fold in the caramel chips.
- Spread into an 8 x 8 or 9 x 9 pan. Bake for 25-30 minutes or until golden brown on the edges and a toothpick inserted into the middles comes out clean.
- Remove from oven and cool completely on a wire rack.
- Cut into 16 squares.
