Cinnamon Maple Pecan Cookies

Fall is in the air, the weather is finally starting to cool down, and today begins a week long Flavors of Fall event!   I’ve been waiting for this one because fall flavors are definitely my favorite.  Think of apples, pumpkin, spices, maple, and caramel.   Pretty much all of my favorite things in one awesome season.

I’m starting out the week with these Cinnamon Maple Pecan Cookies.  The maple flavor comes from Door County Maple Coffee as well as a light maple drizzle.  The cinnamon pecan comes from Millican Cinnamon Pecans which I can’t get enough of.   I put them in the cookie batter and then placed one on top of each cookie as well.

These cookies came about on the fly one day. I’d been thinking about making a fall flavored cookie but didn’t know what to make.  My parents were down for the day and were entertaining J so I popped into the kitchen for a few minutes, looked for ingredients, and came up with these Cinnamon Maple Pecan Cookies.  I have to say, for only giving them a few minutes of thought they turned out really delicious.

Fall is here and these Cinnamon Maple Pecan Cookies are first on my to bake list!

The cookies are soft and flavorful.  You can taste the cinnamon, maple, and coffee flavors and the pecans add a nice crunch.  I left half of the cookies alone as they were and the other half I put a cinnamon candied pecan on top with the maple drizzle.  I recommend waiting to put the drizzle on the day you are serving the cookies because it really softens them up.

I really enjoyed these cookies with a cup of coffee.  They are perfect for enjoying while sitting out on the porch with a hoodie on in the fall.  I would totally serve these at a dinner party or take them to a football game.  They are a very versatile cookie.

Cinnamon Maple Pecan Cookies

Equipment

Ingredients

For the cookies:

  • 1/2 c. butter softened
  • 1/2 c. brown sugar
  • 1/4 c. sugar
  • 1 egg
  • 1 teaspoons vanilla
  • 3 teaspoons strong brewed Door County Maple Coffee
  • 1 1/2 c. flour
  • 1 teaspoons baking powder
  • 1 teaspoons salt
  • 1/2 c. Millican Cinnamon Candied Pecans chopped

For the drizzle:

  • 3 teaspoons powdered sugar
  • 1 teaspoons maple syrup
  • 18 cinnamon candied pecans

Instructions

  • In a large bowl cream together the butter, brown sugar, and sugar.
  • Add in the egg and vanilla and mix well.
  • In a medium bowl combine the flour, baking powder, and salt. Mix well.
  • Add the flour mixture to the butter mixture and mix until combined.
  • Add in the coffee and stir until everything is mixed together.
  • Fold in the pecans.
  • Refrigerate the dough for 30 minutes.
  • Preheat the oven to 375 degrees.
  • Drop the batter on a cookie sheet by heaping tablespoon.
  • Bake for 11-12 minutes.
  • Remove from oven and place the cookies on a wire rack to cool completely.
  • If desired place a cinnamon candied pecan in the middle of the cookie.
  • Whisk together the powdered sugar and maple syrup until smooth. Drizzle over top of the cookies.
