Cookie Butter Granola Bites

Last weekend I went home to be in a book trivia contest with my little cousin Greggy.  It was for his school and he had to ask 3 family members to be on his team so he asked me, my dad, and my cousin (his mom).

I was glad he asked because I ended up reading some wonderful children’s literature I wouldn’t otherwise have read.  We read The One and Only Ivan, The Wednesdays, My Life as a Stuntboy, and Wonder.  I had already read Wonder but the other three were good reads as well.

While I was home my brother and I got to hang out for a while and usually that means we like to go thrift store shopping and then to some of the markets that I don’t have here in Maryland.

This time we went to Trader Joe’s.  I haven’t been there in forever so it was a nice treat.  I got a few things including a jar of Cookie Butter.  I couldn’t help it, I love that stuff!  I actually bought the crunchy kind which I hadn’t had before and it was seriously awesome.

In an effort not to eat the entire jar with a spoon I wanted to make something for brunch when my book club came over.   These Cookie Butter granola bites were perfect.  They are a combination of oats, Rice Krispies, Cookie Butter, and a few other ingredients.  They are great for breakfast or as an on the go snack.

This week I’m talking about foods for lunch boxes!  This is a great topic for this week as I go back to work (teaching) tomorrow.  I thought that these granola bites would be perfect for kids to take to school with them instead of potato chips or cookies.

I also think they’ll be perfect for me to pack in MY lunchbox during the school year.   The ingredients are simple and you could substitute peanut butter for the cookie butter or add in some chopped nuts.

Cookie Butter Granola Bites  (adapted from The Barbee Housewife)
1/3 c. honey
1/3 c. Trader Joe’s Cookie Butter
2 T. butter, softened
1 c. Rice Krispies
1 1/2 c. rolled oats
1/2 t. sea salt
1/4 c. Hershey’s white chocolate chips
1/4 c. Hershey’s cinnamon chips

1..  In a small saucepan heat the honey, Cookie Butter, and butter over medium high heat. Allow the butter to melt and mix until the ingredients are well mixed.

2.  Remove from heat and stir in the Rice Krispies and rolled oats.  Sprinkle in the sea salt and then fold in the white chocolate chips and cinnamon chips.

3.  Roll the mixture into golf ball sized balls.  Place on a baking sheet and refrigerate for 15 minutes to set.

4.  Store in an air tight container at room temperature for up to 3 days.


  1. I recently tried cookie butter for the first time, and it is way too good! I am looking for recipes so the entire jar doesn’t get eaten with a spoon. These bites are perfect! White chocolate and cinnamon chips AND cookie butter? Mmmmmm…

  5. I love that there is hardly any cooking involved to make these, Heather. They would be a perfect to make with younger children to help roll them! If they could roll any without eating the mixture straight off the spoon, that is. 🙂
