Copycat Crumbl Blueberry Muffin Cookies

Copycat Crumbl Blueberry Muffin Cookies have all the flavors of a bakery style blueberry muffin, including the streusel topping, packed into one big, irresistible cookie. Perfect for breakfast inspired snacking or dessert!

Cookies are quite possibly my favorite thing to make because they are easy, I always have a ton of add ins in my pantry, and they are fairly quick as well.
A lot of people talk about Crumbl Cookies.  While we don’t have any of these cookie bakeries in my area there is one about an hour away and every time someone goes to that town they come back with a little pink box of cookies.
What are Crumbl cookies?
Crumbl Cookies is the United States fastest growing cookie company. It has a weekly rotating cookie menu. The chocolate chip cookie is always available along with four other flavors each week. Some favorites are the classic sugar cookie, brownie batter cookie, and seasonal favorites.
While I like Crumbl, I do think they tend to be a bit on the sweet side so I’ve been making my own copycat versions that are amazing. I’ve made the original Sugar Cookie with pink frosting. One of my newer favorites is the Banana Bread Cookies which is a great way to use up ripe bananas. My personal favorite is the New York Cheesecake Cookie with caramel on top.
This week I ended up with two large containers of blueberries. I started looking for recipes and found a copycat Crumbl Blueberry Muffin Cookie recipe. A cookie and a muffin in one recipe? Yes please!
The base of the cookie is similar to many of my cookie recipes except it has cornstarch in it which helps prevent the blueberries from sinking in the cookies and keeps them spread out. Then there’s a cinnamon spiced streusel on top.
What is streusel?
Streusel is a crumbly topping usually made from butter, flour, and sugar, and often includes spices like cinnamon and sometimes nuts or oats. It’s used to top baked goods like muffins, coffee cakes, pies, and breads to add a sweet, crunchy texture.

Ingredients:
- salted butter (or unsalted if you prefer)
- granulated sugar
- light brown sugar (or dark brown sugar if you prefer)
- egg
- vanilla extract
- all purpose flour
- cornstarch
- baking powder
- baking soda
- salt
- fresh blueberries
- blueberry jam (you can also make a quick jam yourself)
Preheat the oven to 350 degrees. In a large bowl cream together the butter, sugar, and brown sugar. Add in the egg and vanilla and mix well.
In a medium bowl combine the flour, cornstarch, baking powder, baking soda, and salt. Add the blueberries and toss to coat. Add the butter mixture to the flour mixture and stir gently to combine.Â

Use a 1/4 cup cookie scoop and drop scoops of dough onto a cookie sheet 3 inches apart. Place a small dollop of jam on the cookie and swirl. Bake for 13-15 minutes or until the center of the cookies is just set. Remove from oven and let cookies cool 5 minutes before transferring to a wire rack to cool completely.
These cookies are delicious!  They are soft with a little bit of chew and are bursting with fresh blueberry flavor. The crumble on top adds a bit of sweetness of spice to the cookies.

How do I store these cookies?
Since the cookies are pretty soft and delicate it’s best to store them in a single layer in an air tight container. If you do stack them put a piece of parchment paper in between the layers so that the cookies don’t stick together.  They will last for 3-5 days.
Since these are a cross between a cookie and a muffin they are great for breakfast, as a snack, or to pack in a lunch box. Switch up the fruit to make other flavor cookies too!

For the cookies:
- 1/2 cup salted butter softened
- 1/3 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1 Tablespoon cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup fresh blueberries
- 3 Tablespoons blueberry jam
For the streusel topping:
- 3 Tablespoons salted butter softened
- 2 Tablespoons light brown sugar
- 2 Tablespoons granulated sugar
- 1/2 cup flour
- 1/4 cup oats
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- To make the streusel place all ingredients in a bowl and mix with a fork until crumbly. Set aside.
- Preheat the oven to 350 degrees.
- In a large bowl cream together the butter, sugar, and brown sugar. Add in the egg and vanilla and mix well.
- In a medium bowl combine the flour, cornstarch, baking powder, baking soda, and salt. Add the blueberries and toss to coat them.
- Add the flour mixture to the butter mixture and gently combine.
- Using a 1/4 cup cookie scoop, scoop batter onto a cookie sheet 3 inches apart.
- Place a small amount of jam on top of each cookie and swirl. Top with the streusel.
