I’ve been on a total fudge kick lately.   I keep a lot of chocolate and candy melts in the house and I’ve been trying to get rid of some and one of the easiest and tastiest ways to do this is to make fudge.  I’ve made several new types and with St. Patrick’s Day coming up I knew exactly what kind of fudge I wanted to make for it.

I wanted to make Double Chocolate Fudge for St. Patrick’s Day.  This is simply two layers on fudge using two different colors with some sprinkles on top.  I used milk chocolate candy melts for the bottom layer and green candy melts for the top layer.  Then I added sprinkles to the top of it.

Since I often think of mint when I think of St. Patrick’s Day I have the option of adding in mint to the green layer.  I love the chocolate mint combination.   I made one batch with just the candy melts and one with the mint and I liked the mint best.  Plus this is quick fudge so the entire pan is ready in under an hour.

The great thing about this fudge is that you can use any two colors and use it for a variety of different holidays.  You could use red and green for Christmas or yellow and pink for Easter.  The possibilities are endless!  Plus you could add in different flavors for different holidays as well.  A pink layer with cherry flavoring would pair nicely with a chocolate layer for Valentine’s Day!

Double Chocolate Fudge for St. Patrick's Day

Yield: 25 pieces
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

A delicious green and brown two layer fudge topped with sprinkles.

Ingredients

  • 1 1/2 c. milk chocolate
  • 1 1/2 c. green candy melts
  • 1 teaspoon mint extract (optional)
  • 1 can (14 oz.) sweetened condensed milk
  • green and gold sprinkles

Instructions

  1. Line an 8 x 8 baking dish with foil.
  2. Put the milk chocolate in a sauce pan along with half of the sweetened condensed milk. Heat over medium low, stirring frequently, until melted.
  3. Pour the chocolate into the prepared pan and refrigerate for 15 minutes.
  4. Put the green candy melts in a sauce pan along with half of the sweetened condensed milk and the mint extract if using. Heat over medium low, stirring frequently, until melted.
  5. Pour over top of the milk chocolate and sprinkle with the green and gold sprinkles.
  6. Refrigerate for 45 minutes.
  7. Pull the fudge out of the pan using the foil and cut into 25 squares.
