Easter is just around the corner and I’ve been working on all of my holiday sweets recipes!   As you know I tend to go a little bit over board with some of my holiday sweets but this week I made a few easy, no bake options.

The main ingredient in most of these recipes are PEEPS.   I think PEEPS are an Easter icon and decided to try my hand at making some fun Easter sweets.

What are PEEPS?

Peeps are a wonderful combination of sweet colored sugar coating soft, fluffy marshmallow candies. They are most famous for their bright yellow chick shape around Easter.  However, they now come in a variety of shapes and flavors for different holidays.

Over the years I’ve made many desserts with PEEPS because they are one of my mom’s favorite candies. PEEPS S’mores are a fun option that you can package and give out at parties, school events, or as a take home favor.  Another no bake option are PEEPS Nest Rice Krispies Treats. If you are looking for a baked option then PEEPS Nest Cupcakes are adorable.

This week I actually went for a recipe I made years and year ago.  It’s simply Chocolate Covered Peeps that I put on lollipop sticks and make into a bouquet with a ribbon tied around it.  It’s great as a centerpiece, to give as a hostess gift, or just to keep around to snack on.

Now I saw chocolate covered PEEPS but you can actually use chocolate, white chocolate, or colored candy melts.  I tend to use colored candy melts because I can choose the nice pastel colors of spring.

How do you melt chocolate?

There are several ways you can melt chocolate. The first is in a microwave.  Place the chocolate or candy in a microwave safe bowl and heat in 20 second intervals, stirring in between each interval, until almost completely melted. You can also melt it on the stove top.  Fill a pot with 2 inches or water and simmer.  Place a heat safe bowl on top of the pot but don’t let it touch the water.  Add the chocolate and stir until completely melted.

You also need to pick out sprinkles.  I had these really pretty pastel colored jimmies that I thought would look great but I ended up only using them on the bottom of the chicks.   I really think the tiny, round nonpareil sprinkles work best for the bunnies. However, use your judgement and what you like best.

Lastly you will need lollipop sticks.  I chose two different sizes so that my bouquet of pops would be leveled but you can buy the big ones and then just cut them to sizes if you prefer.  You can also keep them all the same size.

A cutting board with 4 types of candy melts, four colors of PEEPS, and sprinkles on it.

Ingredients:

  • 1 box Peeps bunnies (12 count)
  • 1 box Peeps chicks (10 count)
  • Multiple colors of chocolate candy coating (pink, yellow, blue, and white)
  • Sprinkles
  • Lollipop Sticks

To make the PEEPS first stick the lollipop stick into the bottom of the bunnies.   You will put the stick in the chicks later.   Melt the chocolate candy one at a time in the microwave until melted.

Completely submerge the bunny in the chocolate then tap on the side of the bowl to remove excess chocolate.  This works best when placing the melted chocolate in a tall, skinny glass.  Immediately sprinkle with sprinkles and lay on waxed paper to harden.

For the chicks simply dip the bottoms in the candy, put on the sprinkles, and allow the candy to harden.  Carefully stick the lollipop sticks in the bottom of the chicks.

I love the look of the chocolate covered bunny PEEPS.  They are totally adorable and look so good with the sprinkles on them.  I also think they taste so much better than regular PEEPS.

The chicks are cute and have more of the original PEEPS taste.  Together they make a beautiful bouquet of Easter fun.

How do I store chocolate covered peeps?

You can store them in an air tight container at room temperature for 2-3 weeks. You can also wrap the PEEPS part in a plastic cookie wrapper and tie it with a ribbon.
