Sparkling Berry Cocktail

Letโs talk about cocktails! Today Iโm going to share a tasty and easy to make cocktail recipe thatโs perfect for sharing at summer parties and cookouts. It would also be fun for patriotic holidays because it has a little bit of red, white, and blue in it.
So what cocktail am I making? Well if you know anything about me then you know my husband and I enjoy drinking champagne or sparkling wine. Whenever you are enjoying a glass itโs like you are celebrating every single time. Today Iโm sharing a recipe for a Sparkling Berry Cocktail which not only tastes great but looks great too!
To make this delicious cocktail you first will need to make a berry simple syrup using raspberries and Wish Farms Blueberries. Iโm happy to say that my market now carries Wish Farms blueberries all the time and is starting to carry Wish Farms blackberries as well so purchasing these berries was easy. I made the simple syrup using the berries, sugar, water, and cinnamon.
After making the berry syrup all I had to do was pour some in a champagne flute and top it with sparkling wine or champagne. Then I put a sprinkle of cinnamon on top along with a fancy cocktail pick of berries. This makes for a festive looking beverage that tastes delicious.
One word on the champagne or sparkling wine that you are using. We prefer a dry Brut sparkling wine so thatโs what I used in this cocktail. I thought that the berry simple syrup added plenty of sweetness and I didnโt need a sweeter wine. However, if you usually choose a Prosecco or sweeter sparkling wine please feel free to substitute that in the place of the Brut sparkling wine. Cheers!
Sparkling Berry Cocktail
Ingredients
For the cocktail:
- ยผ c. Wish Farms raspberries
- ยฝ c. Wish Farms Blueberries
- 1/3 c. sugar
- ยผ c. water
- 1 teaspoon cinnamon
- 1 bottle of dry Brut sparkling wine or champagne
For decoration:
- Cinnamon
- blueberries
- raspberries
- Mint leaves
Instructions
- In a medium saucepan combine the raspberries, blueberries, sugar, water, and cinnamon over medium high heat. Bring to a boil then reduce heat and simmer for 10 minutes, stirring occasionally.
- Remove the simple syrup from heat and pour through a fine mesh strainer to remove the seeds. Place the strained syrup in a container and refrigerate until cooled.
- To make the cocktail, pour 1 ounce of the berry syrup into the bottom of a champagne flute. Fill the flute with sparkling wine or champagne. Sprinkle with cinnamon.
- Using a fancy cocktail pick, spear a few raspberries and blueberries and put them in the cocktail. Top with a fresh mint leaf.
