These gooey, marshmallow treats are dyed a festive green, sprinkled with green and gold sprinkles, and cut into squares. They are great for parties, school treats, or a sweet little holiday snack.

St. Patrick’s Day is just around the corner and I’ve been trying to find a quick and easy dessert recipe to share at work.   While I’d love to make a fun decorated cake we’ve pretty busy lately so I just want something that’s fast and fun. 

In the past I’ve made a bunch of St. Patrick’s Day desserts including these decadent Mint Chocolate Cupcakes. Quick and easy Lucky Charms Treats using the lucky cereal was a fun and easy sweet. I’ve also made these incredible Thin Mint Stuffed Cookies which are out of this world.

Lately I’ve been on a roll with cereal treats in different shapes, flavors, and colors so I thought I’d give St. Patrick’s Day Rice Krispies Treats a try!

What are Rice Krispies Treats?

Rice Krispies treats are a classic no bake dessert made by melting butter and marshmallows then stirring in Rice Krispies cereal. The gooey mixture gets pressed into a pan, cooled, and cut into squares.

I knew I wanted to dye the treats green but needed to decide on what color or type of sprinkles to put on top.  Since green in the main color of St. Patrick’s Day but gold is also associated with it I went with basic green and gold sprinkles. 

I originally was going to cut the cereal treats into shamrock shapes but I could not find my cookie cutter so I just went with squares.  Feel free to use a cookie cutter and cut these into fun shapes once they have hardened.

Can I decorate the treats?

Yes!   Melt colored chocolate and drizzle it on one side of the treat or pipe a shamrock on it. You can also add additional sprinkles on top.  You can even dip the bottom half of the cereal treats into chocolate or yellow candy melts so it looks like gold.  There are so many possibilities!

Ingredients:

  • Rice Krispies Cereal
  • mini marshmallows (or large marshmallows cut into pieces)
  • butter (I prefer salted but unsalted is fine)
  • green food coloring
  • holiday sprinkles

To make the Rice Krispies treats first melt the butter in a large sauce pan.  Add the marshmallows and mix until melted.  Remove from heat and whisk in the food coloring.  Add the sprinkles and cereal and mix until combined.  Pour into an 8 x 8 baking dish sprayed with cooking spray.  Quickly put sprinkles on top and press down so they stick.   Allow to sit 15 minutes before cutting into squares or shamrocks.

These Rice Krispies treats are so fun!   They taste like the original but I loved the green color and gold sprinkles on top.   It just made them that much more unique and festive. 

Can I add a flavor to these treats?

You can add different extracts to these cereal treats.  Since they are green a teaspoon of mint extract added to the melted marshmallows would be a good way to give them a bit of mint flavor.  You could also add green or yellow marshmallows that are flavored like lemon and lime to add a citrus flavor to the treats. 

How do you store the treats?

Store them in an air tight container at room temperature for up to 1 week.  They are best eaten within a few days.

These treats are easy to make and easy to pack up and take with you to a party, a sports event, or to share at work.   Kids love them too so take them to school for a treat!

St. Patrick’s Day Rice Krispies Treats

Ingredients

  • 3 cups Rice Krispies Treats
  • 2 cups mini marshmallows
  • 3 Tablespoons butter
  • green food coloring
  • green and gold sprinkles

Instructions

  • Put the butter in a large sauce pan over medium high heat.
  • Once melted added in the marshmallows and stir occasionally until melted.
  • Add in the green food coloring and mix.
  • Remove from heat and add in the Rice Krispies cereal and sprinkles and stir to coat.
  • Spread into a greased 8 x 8 baking dish using a wooden spoon. Put on additional green and gold sprinkles.
  • Let cool for 15-20 minutes then cut into squares.
