I can hardly believe Christmas is right around the corner!  Normally by this point in the year I’ve had multiple snow days or delays.   In fact, some years we’ve even had snow on Halloween!  This year has been the exception. It’s been 50 and even 60 degrees here until this past weekend.   Finally over the weekend we saw some snow.   It was only a bit of flurries and they only lasted for a day but it finally felt like Christmas.  Of course it’s back up to 50 degrees today but I’m not complaining!

One of my favorite things about Christmas time is sitting inside in front of the fire and enjoying a hot beverage.  At night my beverage of choice is hot cocoa and I often make it from scratch and pair it with homemade marshmallows.

Unfortunately I can’t always make homemade marshmallows.  In fact, I almost burnt down the kitchen making my last batch of marshmallows.  Note to self:  don’t leave sugar and corn syrup on the stove without watching it!

White Christmas Hot Cocoa is a delicious winter beverage

When I don’t have homemade marshmallows I like to turn to the whipped cream.   If I’m having whipped cream on my hot cocoa I like it to be white hot cocoa.   If I have white hot cocoa I like to add peppermint.   Does any of this sound like the book If You Give a Mouse a Cookie? I sure think it does!

I made this delicious White Christmas Hot Cocoa this past weekend and it was delightful.  Warm milk mixed with spicy cinnamon, peppermint extract, and white chocolate made for a creamy hot beverage.  Then I added whipped cream and crushed peppermints on top!  This is the ultimate taste of Christmas in a cup.

White Christmas Hot Cocoa

Cook Time: 5 minutes
Total Time: 10 minutes

Enjoy a delicious white hot cocoa with whipped cream and peppermint.

Ingredients

  • 4 c. milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon peppermint extract
  • 4 oz white chocolate, chopped
  • Whipped Cream
  • Crushed Peppermints

Instructions

  1. In a medium saucepan combine the milk, cinnamon, peppermint extract, and white chocolate.
  2. Cook over medium heat, stirring occasionally, until the white chocolate has melted and the milk is steaming. Do not boil!
  3. Pour into two mugs. Top with whipped cream and sprinkle with crushed peppermint.
