Baked Blueberry Oatmeal

Let’s talk about oatmeal.  I’m not a fan.  I don’t like the texture of it and I never seem to be able to cook it correctly.  So a couple of years ago when someone asked me if I ever tried baked oatmeal I said that I hadn’t and didn’t think I’d like it.   That friend brought me a piece the very next day and I tentatively tried it.   I was surprised by how much I enjoyed it!

The best part about baked oatmeal is the texture.  It’s more like a chewy bread texture then a wet oatmeal texture.  It’s really delicious and the perfect alternative to regular oatmeal.

I started experimenting with different oatmeal flavors.   One of my favorites is a pumpkin spice oatmeal studded with dried cranberries.   It’s really fun trying to find new combinations to add to the baked oatmeal to make it taste totally different.  The main ingredients in the baked oatmeal are oats, eggs, spices, some type of fruit, and some type of nuts.

I decided on blueberry oatmeal this time around because I got a great deal on blueberries at the market.  When I got home I started trying to gather the ingredients I wanted to put in the oatmeal.   I finally came up with blueberries, vanilla, ginger, cinnamon, and orange zest.   I also added a crunchy and healthy topping of walnuts, flax seeds, and honey on top of it.

I anxiously waited for it to come out of the oven.  It had a sweet and slightly spiced smell.  When I took it out of the oven the topping was golden brown and looked amazing.  My first bite was pure bliss.  The topping was crunchy and sweet while the oatmeal was soft, spiced, and bursting with the blueberries.

Because this oatmeal is baked its great to make, cut into pieces, then eaten all week for breakfast.  It’s also a wonderful dish for a family brunch because its easy to make, easy to serve, and can be made with any fruit or nut combination.   Give it a try this week!

Baked Blueberry Oatmeal

Yield: 8 pieces
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes

A delicious and hearty baked oatmeal studded with blueberries and topped with a sweet nut and flax seed topping is perfect for a family brunch.

Ingredients

For the oatmeal:

  • 3 c. oats
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 c. Dixie Crystals brown sugar
  • 2 eggs
  • 1 teaspoon orange zest
  • 1 teaspoon orange extract
  • 1 1/2 c. milk
  • 1 c. blueberries

For the topping:

  • 1/2 c. walnuts, chopped
  • 1/3 c. flax seeds
  • 2 Tablespoons honey
  • 1 Tablespoon Dixie Crystals brown sugar
  • 1 Tablespoon vegetable oil

Instructions

  1. Preheat the oven to 375 degrees. Spray a 9 x 13 baking dish with cooking spray.
  2. In a large bowl combine the oats, baking powder, sea salt, cinnamon, ginger, and brown sugar.
  3. In a medium bowl beat the eggs. Add in the orange zest, orange extract, and milk.
  4. Fold in the blueberries.
  5. Pour the liquid ingredients into the bowl with the dry ingredients and mix well. Pour the oatmeal into the prepared baking dish.
  6. In a small bowl combine all the ingredients for the topping. Mix well and sprinkle over top of the oatmeal.
  7. Bake for 25-30 minutes or until golden brown.
  8. Remove from oven and cut into 8 large rectangles.

  1. Ever since I got a popover pan and discovered how simple popovers really are to make, brunch has not been complete without a nice basket of hot, eggy popovers with homemade jam. My spouse is my favorite brunch companion!
