1 Hour Soft Dinner Rolls

Need dinner rolls fast?   My 1 Hour Soft Dinner Rolls are ready from start to finish in only one hour and have a buttery finish.

I don’t know about you but I love homemade bread.   Whenever I can make it I do.  Not only do I love the taste of a great homemade bread or roll but I can’t get enough of the smell of it baking in the oven.

I always make homemade rolls for the holidays.  If there’s one time of year it’s a must it’s for the holidays.  While it does take some time I find that it’s totally worth it. No one wants to eat gummy store bought rolls at Thanksgiving, Christmas, or Hanukkah.

Normally I would make sourdough rolls or my favorite dinner rolls but I don’t always have time to let my dough go through two rises.  It takes anywhere from 3-4 hours to make traditional dinner rolls.

Ingredients:

  • water
  • butter
  • milk
  • honey
  • active dry yeast
  • flour
  • sea salt
  1.  The first thing you will do is heat up the liquids.  Place the water, butter, milk, and honey in a microwave safe bowl and heat for 45 seconds.  Stir well then heat in 15 second intervals until the mixture is warm but not hot. 
  2. Pour the mixture into a large bowl and add in the yeast.  Give it a quick stir then let it stand for 5 minutes or until it starts foaming.
  3. Add 3 1/2 cups of the flour into the yeast mixture along with the salt.
  4. Mix well until combined.  If the dough is still sticky add in another 1/4 cup and mix well.  If the dough is still sticky add in another 1/4 cup and mix well.
  5. Turn onto a floured covered surface and knead for 5 minutes.
  6. Put in a greased bowl, cover, and let rise for 15 minutes.
  7. Divide the dough into 10-12 pieces and gently shape into balls.  Place in a greased 9 x 13 baking dish.
  8. Cover and let rise for 20 minutes.
  9. Meanwhile, preheat the oven to 400 degrees.
  10. Melt a tablespoon of butter and brush over top of the rolls.  Sprinkle with sea salt. 
  11. Bake for 15-18 minutes or until the tops start turning brown.  Remove from oven and brush with more butter and sea salt.

The thing I love about this recipe is that while there are two rising times one is only 15 minutes and the other is just 20 minutes.  I was a little nervous because in the past when I’ve made yeast rolls in a short amount of time they’ve been pretty dense.

So my dough rose a ton during the first rise I was pretty excited.  I started feeling like these rolls might be worthy of a holiday meal AND they would save me a ton of time.

My yeast is expired or close to the expiration date, is it ok to use?

Expired yeast is never worth it.  It may work and it may not but if you but all your time into a dish and then it doesn’t work it’s a waste of time and ingredients.   With this recipe you want a big rise in a small amount of time so I wouldn’t use yeast close to expiring either.

Can I add in some herbs or cheese to these rolls?

Of course you can!  I actually added 1 teaspoon of roasted garlic to my dough and it was delicious.  You can add in 1 teaspoon of dried herbs or 2 Tablespoons of chopped, fresh herbs to these rolls. If you want to add in cheese 1/3 c. of finely grated cheese gives these rolls a ton of flavor. 

I want to make these but I have to run out.  Is it ok if I let them rise a little longer?

Yes, it won’t hurt these rolls to rise 30 minutes each time instead of 15 minutes.  If you need to do something else or run an errand go for it!  While you can lengthen the rise time make sure you don’t shorten or skip either rise.

Can I make and bake these ahead of time?

Yes!  You can make and bake these up to 3 days ahead of time.  When ready to serve pop them in the oven at 325 degrees for 5-10 minutes to heat them up before serving.

After the second rise the rolls were a decent size.  I brushed them with butter and sprinkled them with salt then popped them into the oven.  They smelled amazing as they baked.

When I pulled them out I added more butter and salt then let them cool off.  My husband and I had them with bowls of soup and they were amazing.

We were both really surprised by how soft and fluffy these rolls were.   Most of the rolls I make that don’t have a full rising time are dense but these were not.  We were both impressed by them and ended up eating all of them ourselves over the next few days!

I definitely would not hesitate to make these for a holiday dinner.  They are also easy and quick enough to make for an everyday dinner.  I’ll be keeping this recipe close at hand this winter whenever I need rolls for my homemade soups!

  • 4 c. flour
  • 1 teaspoon sea salt
  • Extra butter and salt
