Some nights after dinner I just want something sweet.  You would think that I have something just laying around but most times I don’t.   Before Baby J was born I would make a batch of sweets every weekend so we did always have something laying around but now I either don’t have the time or I’m trying to eat better so I don’t have any sweets in the house.

What exactly is a Brookie? It's a delicious combination of chocolate chip cookies and brownies!

Whenever my husband and I start having that dessert craving I usually make either cookies or brownies.  I do this because they are easy to make, I always have the ingredients on hand, and we like them.   Cookies take a shorter amount of time to actually cook but I make multiple batches so it takes longer then putting the brownies in a pan and letting them go.

So last weekend when we were craving sweets I thought why choose between cookies and brownies when we can have them both?    For the last few years Brookies have been super popular but I’ll let you in on a secret.  I’ve never had a brookie and I’ve never made a brookie.  Can you believe that?   For all the hype I just haven’t gotten there.

Whip up a batch of chocolate chip cookie dough and brownie dough then put them together in these awesome Brookies!

So since I was making dessert after J was in bed and I had a little time I thought why not try to make brookies?  The dough is easy to make.  It’s simply two easy doughs that you smash together in order to make one delicious cookie.  One is a basic chocolate chip cookie dough the other is a brownie dough.  Grab a piece of each, smash them together, then flatten them out and bake.

Why decide between cookies and brownies when you can have them both with these Brookies!?

These cookies were amazing!  It’s really the best of both worlds.   I have my chewy, delicious chocolate chip cookie and I have my chocolatey brownies.   I like eating these right down the middle so I get a bite of each cookie in every single bite.  These are great to pack in school lunches or as an after school snack for those going back to school (like me!)

Why choose between chocolate chip cookies and brownies when you can have them both in these brookies?

Ingredients

For the brownie dough:

  • 5 Tablespoons butter
  • 1/3 c. brown sugar
  • 1/3 c. sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 c. flour
  • 1/4 c. unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the chocolate chip cookie dough:

  • 5 Tablespoons butter
  • 1/3 c. sugar
  • 1/3 c. brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 c. flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 c. mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium bowl cream together the butter, sugar, and brown sugar for the brownies. Add in the egg and vanilla and mix well. Set aside.
  3. In a medium bowl combine the flour, cocoa powder, baking soda, and salt. Mix well.
  4. Add the cocoa powder mixture to the butter mixture and mix until just combined. Place in the refrigerator while you make the chocolate chip cookie dough.
  5. In a medium bowl cream together the butter, sugar, and brown sugar.
  6. Add in the vanilla and egg and mix well. Set aside.
  7. In a medium bowl combine the flour, baking soda, and salt. Mix well.
  8. Add the flour mixture to the butter mixture and mix well. Fold in the chocolate chips.
  9. Remove the brownie batter from the refrigerator.
  10. Take a half inch piece of each batter and press together. Flatten the cookie and place it on a cookie sheet. Make sure cookies are 2 inches apart.
  11. Bake for 10-11 minutes then remove from the oven. Cool on the cookie sheet for 2 minutes then remove to a wire rack.
