Do you ever host the holidays and feel like you make the same thing year after year?   I feel like that a lot.  Not only do I serve some of the same things at the holidays but I do it for cocktail parties, brunches, and cook outs as well.  I feel like we always find a few things that everyone enjoys and then we keep making them.  While I know everyone is going to enjoy what I make sometimes I like to come up with something different.

Hosting a brunch is nice because I can make a variety of foods.   Brunch is great for breakfast, lunch, or dinner items plus you can add in desserts as well.  I was trying to come up with a few snack or appetizer items when I started thinking of monkey bread.  I made an awesome pepperoni pizza monkey bread for Game Day a few years back and it was a huge hit so I started thinking along those same lines.

I came up with Pretzel Monkey Bread.  We’ve really been on a pretzel kick lately because my son enjoys all types of pretzels.  Whenever we go to the mall he points and gets excited when we pass the pretzel place.  It’s gotten to the point where the employees know him!

Easy Pretzel Monkey Bread

While I’ve made homemade pretzels multiple times in the past I just don’t have the time to do it with a toddler so I looked for some type of dough that I could use to make the pretzels.   I found Rhodes Bake-N-Serv®Frozen Bread Dough and gave that a try.  I like that it came in a three pack so that if I had trouble with the first batch I could easily make another one.  Plus, I’d have another loaf leftover to make fresh bread with.

The most important thing to remember when making this bread is that you need to let the bread thaw and rise 6-8 hours so either take it out the night before and put it in the refrigerator or take it out and put it on your counter first thing in the morning.  I did not do that when I was making this and by the time the bread was ready to go it was dinner time.  While thawing the bread isn’t hard at all it does take some thought ahead of time.

After letting the bread rise I cut it into 1 inch pieces.   I then boiled the pieces in a baking soda water bath.  This is important to making sure the bread dough tastes like pretzels.  Then I put everything together in a Bundt pan with butter and sprinkled it with salt.  A word to the wise, I thought I had way too much salt but in reality I had to add more at the end.

Depending on how many people will be eating this dish you may want to use two loaves of the bread dough.  I only used one which was perfect for my group of 5 but if you are having 8 or more people I would use two loaves of the dough.  Another tip is to make sure you stick the pieces of dough together in the pan.   While it wasn’t hard getting the monkey bread out of the pan, some of the pieces rolled off the bread.

When serving I simply put a bowl of mustard in the middle of the Pretzel Monkey Bread but it would be really tasty with cheese dip as well.  The Pretzel Monkey Bread tasted just like a loaf of mini pretzel bites and is the perfect snack for a party because people can just pull off a piece, dip, and enjoy.  It’s easy to make and easy to eat which is why it’s so great for entertaining!

Pretzel Monkey Bread

Yield: serves 6-8
Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Make mini pretzel bites from frozen bread dough and bake it into a loaf then serve with mustard or cheese dip.

Ingredients

  • 1 loaf Rhodes frozen bread dough
  • 10 c. water
  • 1/2 c. baking soda
  • 3 Tablespoons butter, melted
  • sea salt
  • 1 egg yolk, beaten with 1 tablespoon water.

Instructions

  1. Allow the frozen bread dough to thaw for 6 hours and rise in a loaf pan.
  2. Preheat the oven to 400 degrees.
  3. Bring the water and baking soda to a boil on the stove in a large stock pot over high heat.
  4. Turn the bread dough on to a lightly floured surface and stretch into a 12 x 6 rectangle. Using a pizza cutter, cut into one inch squares.
  5. Boil the pretzel bites in batches of 12-15 pieces. Boil for 30 seconds then turn them over and boil an additional 20 seconds.
  6. Remove the pretzel bites with a slotted spoon and place on a paper towel lined baking sheet.
  7. Repeat with remaining pretzel bites.
  8. Brush a Bundt pan with one tablespoon of the butter. Place half the pretzel bites in the Bundt pan lightly pressing the bites together. Drizzle with one tablespoon of butter and sprinkle with salt.
  9. Place the remaining pretzel bites in the Bundt pan and drizzle with remaining butter and sprinkle with salt. Brush the tops with the egg yolk.
  10. Bake for 30-35 minutes or until the monkey bread is golden brown.
  11. Remove from pan and loosen the edges with a butter knife. Allow to cool for 10 minutes then flip over onto a plate.
  12. Place a small bowl in the middle of the bread and fill with cheese sauce or mustard. Serve warm.
