Blueberry Mojitos

One of my favorite summer drinks is a mojito. I love the combination of tart lime juice with fresh mint from my garden. There’s something so light and refreshing about this classic cocktail. So why am I switching it up and making a Blueberry Mojito? Because sometimes even the best cocktail can use a little twist!
Last week when I was in Aldi’s I saw that blueberries were on sale for under a dollar. Since they are never under a dollar I bought 3 containers figuring I’d find something to do with them when I got home. The very next day those same blueberries were staring me in the face so I took them out and decided to make a cocktail!
I played around with a few different cocktail (3 different ones) but the one I liked the best was the mojito. I basically used the classic mojito recipe but I also muddled blueberries in with the limes and mint. The color of the cocktail is gorgeous and the blueberry flavor really adds a little something to the traditional mojito.
I made these last weekend when we had people over and they were a huge hit. Everyone liked that the blueberries add a bit of sweetness to the mojito but the lime and mint flavors were still there. This is a great recipe to make for summer parties and BBQ’s!
Blueberry Mojitos
Give your mojito a twist with fresh blueberries in the mix!
Ingredients
- 1/3 c. blueberries
- 6 mint leaves
- 2 Tablespoons simple syrup
- 2 Tablespoons lime juice
- 2 oz. rum
- 4 oz. sparkling water
Instructions
- Place the blueberries, mint leaves, simple syrup, and lime juice in a tall glass. Muddle with the back of a spoon until blueberries have burst open and the mint is fragrant.
- Fill the glass with ice and pour the rum and sparkling water over top. Stir and serve with a wedge of lime and a few blueberries on top.
