Blueberry Waffles

Crispy on the outside, fluffy on the inside, and bursting with juicy blueberries in every bite! These homemade Blueberry Waffles are the perfect way to make breakfast feel extra special. Top them with butter, maple syrup, and even more fresh berries for a morning treat everyone will love!

Lately I’ve been struggling with what to make for dinner.  While I have a ton of easy weeknight meals, nothing has been sounding very good.Â
I’ve been making breakfast for dinner at least once a week. Breakfast dishes are usually easier to make and they are usually fairly fast as well.Â
One of our favorites is the Overnight French Toast because it can be prepped up to 24 hours in advanced then baked whenever you are ready. When we can get blueberries I enjoy Lemon Blueberry Coffee Cake. We often have Old Fashioned Pancakes for breakfast or dinner when we need a quick one. For a hearty vegetarian meal Farm Fresh Vegetable Quiche is a good one.Â
Recently I’ve been breaking out my waffle iron.  While you can get them in all price ranges I’ve found as long as you get one that’s easy to clean and has a timer on it, you can get one on the lower end of the price.Â
Can you make waffles without a waffle iron?
Yes and no. While you can cook waffle batter without a waffle iron, they are not going to look like waffles.  If you want to make waffles without a waffle iron your best bets are to make waffles in a skillet, a grill pan, or on a sheet pan in the oven.Â
I’ve made several different types of waffles over the last month but most of them haven’t had much flavor beyond cinnamon or vanilla. I had a pint of blueberries that needed to be used and I thought blueberry waffles sounded amazing.Â
I made my basic waffle recipe and added just a pinch of cinnamon along with a bit of vanilla. Then I loaded up the batter with fresh blueberries. Â
Can I use a different berry?
You sure can!  You can use fresh raspberries, blackberries cut in half, or diced strawberries in place of the blueberries. You could also use halved ad pitted cherries.  Any of these would be delicious in these waffles.Â
After making the batter I simply poured it into the waffle iron, let it heat up and brown, then pulled it out once it was golden brown.  The blueberries do tend to stick a bit so make sure the waffle iron is well greased before starting the waffles.Â
Ingredients:
- eggs
- whole milk
- vanilla
- all purpose flour
- baking powder
- salt
- granulated sugar
- cinnamon
- salted butter(or unsalted butter if you prefer)
- blueberries
To make the waffles the waffle iron needs to be preheated then sprayed with cooking spray. The ingredients are all mixed together and the blueberries are folded in.  Pour about 1/4 cup of batter into the waffle iron and heat until the indicator light says it is cooked.Â
These waffles were so good!  The were soft and fluffy with hints of cinnamon and vanilla. The blueberries added a ton of fruit flavor and an appealing blue color to the waffles. Â
What do you put on the waffles?
My favorite it to put a little butter and syrup on top. You can also do fresh berries and whipped cream. Another option is a dusting of powdered sugar on top.  You could even put granola or white chocolate chips on top. Â
This recipe makes around 6 large waffles.  If you are serving them with bacon, sausage, or fruit, you can probably go with one waffle per person.  Sometimes we only serve waffles and we will generally eat one and a half or two each. Â
Can you store the waffles and reheat for later?
You sure can!  Put the waffles in an air tight container or wrap in foil and refrigerate for up to 24 hours.  To reheat you can microwave them but I prefer to put them in the air fryer or the oven to crisp them up while reheating. Â

Blueberry Waffles
Equipment
- 1 waffle iron
Ingredients
- 2 eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla
- 1 Tablespoon baking powder
- 3 Tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 3/4 cups flour
- 1/4 cup salted butter melted
- 1 cup fresh blueberries
Instructions
- In a large bowl whisk together the eggs, milk, and vanilla. Whisk until combined.
- In a medium bowl combine the baking powder, sugar, salt, cinnamon, and flour.
- Add the flour mixture to the egg mixture and whisk until mostly smooth. Whisk in the butter.
- Fold in the blueberries.
- Heat a waffle iron. Pour 1/3 cup of batter into the waffle iron and close it. Cook for 3-4 minutes or until the indicator light turns off to signal the waffle is finished.
- Repeat for remaining 5 waffles.
