Chocolate Cranberry Blondies

Cranberries are one of those things I don’t use a whole lot because it’s hard to find fresh ones unless it’s November or December. I guess I could get frozen ones but I don’t see them by themselves. The frozen ones are usually with other fruits. What we do eat a lot of are Craisins. J often has some for breakfast, I like to add them to salads, and they are great for baking with.
That’s why when I started thinking about what to make for Cranberry Week I knew it was probably going to have dried cranberries in it since that’s what we have around the house. Dried cranberries are super easy to bake with. I always like the combination of chocolate and cranberries so these Chocolate Cranberry Blondies were born.
This blondie recipe makes for soft, buttery blondies which are great for adding things too. In this case I added the dried cranberries and chocolate chips but you can really add 1 cup of anything to these to change up the flavor. I think I might try white chocolate orange cranberry blondies next time.
These cookie bars are so good. They almost melt in your mouth they are so soft. Then the sweet and tart dried cranberries paired with rich chocolate makes for the perfect holiday treat. These would be good to package up and give as a holiday gift or to use in a holiday cookie exchange!
Chocolate Cranberry Blondies

Soft, buttery cookie bars studded with chocolate chips and dried cranberries.
Ingredients

1/2 c. butter (1 stick)

1 egg

1 c. brown sugar

1 T. vanilla

1 c. flour

1/2 c. dried cranberries (or craisins)

1/2 c. chocolate chips
Instructions
- Preheat the oven to 350 degrees. Line an 8 x 8 pan with parchment paper or foil.
- In a large bowl combine the butter, egg, brown sugar, and vanilla and mix until smooth. It's best to use a mixer but you can cream these ingredients by hand.
- Add in the flour and mix until combined.
- Fold in the cranberries and chocolate chips.
- Pour the batter into the prepared pan.
- Bake for 24-26 minutes.
- Remove from oven and cool in pan for at least 1 hour.
- Remove from pan and cut into 16 bars.
