Dill Pickle Tofu Bites

Crispy on the outside and tender on the inside these Dill Pickle Tofu Bites are tossed in tangy pickle brine and dill for that bold, delicious flavor. They’re salty, tangy, and totally snackable. They are perfect for dipping, piling into a bowl, or serving as a fun plant based appetizer.

Years and years ago my husband introduced me to tofu.  To say that it was love at first bite would be a total lie.  The first 3 to 4 times I ate the tofu I wasn’t sure about it. While I enjoyed the flavor I wasn’t a big fan of the texture.Â
Fast forward a year or two and I bought myself a tofu press. Let me tell you; this was a total game changer. Once I could press the water out of the tofu and it became nice and firm I loved eating tofu.
With that said, we eat tofu at least once a week. It’s also one of the few proteins my son will eat. There are so many different ways to make tofu but our favorites are usually in Asian dishes or fried.Â
What is tofu?
Tofu is a plant based food made from soybeans. It’s created by curdling fresh soy milk and pressing it into blocks. It’s similar to how cheese is made but with soybeans instead of dairy.Â
Currently our favorite tofu recipe is Korean BBQ Tofu Bowls because they are packed with huge flavor.  We also eat Crispy Tofu with Dipping Sauce quite frequently. While we don’t have them often, Fried Tofu Sandwiches topped with slaw are great for lunch or dinner.Â
While I have tons of tofu recipes I’m always looking for different recipes, especially those that aren’t Asian dishes since I usually make Asian tofu. I came across a recipe for Dill Pickle Tofu that sounded really interesting so I decided to give them a try.Â
It’s basically firm tofu marinated in dill pickle brine.  Then it’s tossed in a seasoned cornstarch and breadcrumb coating that’s fried to a golden brown.
What type of tofu do I use?
You will need to use either firm or extra firm tofu for these tofu bites. That way you can press the tofu until it’s firm and it will hold it’s shape and have a good texture after it’s fried.Â
Ingredients:
- firm tofu (or extra firm if you prefer)
- dill pickle brine (grab it from a jar of pickles in your refrigerator)
- cornstarch
- breadcrumbs
- garlic powder
- onion powder
- smoked paprika
- black pepper
- salt
To make the tofu first press the water out of the tofu. We use a tofu press to do this but you can press it using a heavy pan. Â
How do you press tofu?
Drain the tofu then wrap it in paper towels. Place it on a plate and then put a small cutting board on top of it. Add a heavy pot or pan (or a few canned goods) and let it press for 20-30 minutes.
Cut the tofu into 1 inch pieces. Place in a bowl with the pickle brine and let sit for 30 minutes. Remove from brine and pat dry.Â
Place the breadcrumbs, cornstarch, garlic powder, onion powder, paprika, black pepper, and salt in a quart bag. Add the tofu and shake until covered. Â
Heat olive oil in a large skillet over medium high heat. Cook for 1-2 minutes per side until the tofu is golden brown. Remove and serve with dipping sauce.Â
We loved these Pickle Tofu Bites! They are so crisp on the outside and soft on the inside and have a big pickle flavor. Â
They can be enjoyed as a snack with dipping sauce or serve them over top of rice for lunch or dinner.  They would also be good served on top of a salad or in a baguette as a sandwich.
What type of sauce do you dip the tofu in?
I personally went with my New Orlean’s Remoulade Sauce because it’s spicy, tangy, and goes so well with the pickle flavor. Sriracha mayonnaise would be another great dipping sauce. You could even serve it with ranch!
How do you store and reheat Pickle Tofu Bites?
Store the tofu bites in an air tight container and place in the refrigerator for up to 4 days.  To reheat the tofu bites put them in the air fryer at 375 degrees for 5 minutes or put them in a 400 degree oven for 10 minutes or fry them in a skillet with a tablespoon of olive oil until they crisp back up.Â

Ingredients
- 1 block 14 oz firm tofu, pressed
- 1/2 cup dill pickle brine
- 3 Tablespoons cornstarch
- 3 Tablespoons breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 2 Tablespoons olive oil
Instructions
- Place the tofu cubes in a bowl and pour the pickle juice over top. Let marinate for 30 minutes.
- Drain the tofu and pat dry.
- Put the cornstarch, breadcrumbs, garlic powder, onion powder, paprika, pepper, and salt in a quart sized bag.
- Add the tofu cubes and gently shake to coat.
- Pour the olive oil into the skillet and heat over medium high heat.
- Add the tofu and cook for 1-2 minutes per side or until all sides are browned.
- Remove from the skillet and serve with dipping sauce.
