Dragon Fruit Margarita

A few months ago I received a box of fun produce from Melissa’s Produce.   Inside the box were plenty of fruits I’ve seen before but many that I’ve never worked with so I was excited to give them a try.  I made cupcakes with one fruit and a cocktail with another but I was dying to try make yet another cocktail.

I really like having fun mixing up new cocktails.  With New Year’s Eve right around the corner I wanted something that was bright, festive, and really fun.  I decided to use the dragon fruit because I love that the outside is such a gorgeous bright pink but the inside is white with black speckles.  It’s really a stunning fruit.

It only takes a few ingredients to make a tasty Dragon Fruit Margarita!

I had several different ideas for cocktails but at the end of the day I thought a dragon fruit margarita would be perfect.  The dragon fruit is fairly mild but a little bit sweet so I knew it would stand up well to the tart lime juice.  I first thought I’d make a frozen margarita but then, who wants a frozen cocktail when it’s freezing outside?  So I went with a margarita on the rocks.

After I blended this cocktail together I really liked the look of it.  It was mostly white with bits of black throughout and it had a bit of foam on the top of it.  I garnished it with a simple lime slice and dragon fruit slice and put a pink straw in it to match the fruit.   I took a sip and was super pleased.   It was sweet and tart and had all the traditional flavors of a margarita but with a hint of the tropics.  It’s perfect for a holiday party or for just sipping on during a dinner party.

Dragon Fruit Margarita

Yield: 1 margarita
Prep Time: 5 minutes
Total Time: 5 minutes

Give your margarita a fun twist with dragon fruit!

Ingredients

  • 1 dragon fruit
  • 2 oz. tequila
  • 2 oz. triple sec
  • 2 oz. lime juice
  • 1 Tablespoon simple syrup
  • 1 lime
  • Salt

Instructions

  1. Cut the dragon fruit in half. Scoop out half of the dragon fruit and put it in a blender.
  2. Add the tequila, triple sec, lime juice, and simple syrup to the blender. Blend for 1 minute.
  3. Run a wedge of lime around the im a short glass and dip into salt.
  4. Add ice cubes to the glass.
  5. Pour the margarita into the glass.
  6. Garnish with a slice of dragon fruit and slice of lime.
