Easy No-Rise Pizza Crust

Picture this.ย ย It’s Friday night, you just got home from work, and you’ve been looking forward to pizza all day long.ย ย You open up the refrigerator and look for the refrigerated pizza dough only to find there isn’t any in there.ย ย No big deal.ย You walk down the stairs to the spare refrigerator and find there is no dough in there either.ย ย Cue the panic.
Yes, this happened to me last weekend.ย ย I had a long week at work and I was really looking forward to a glass of wine and some pizza on Friday evening.ย Unfortunately for me, we were out of pizza crust. I told my husband and we began thinking of solutions.ย ย First we looked online for pizza delivery, but everything was expensive and had way too much fat and calories.ย ย We toyed with going to the market but each of us had had a glass of champagne.ย In a last ditch effort I checked Pinterest to see if I could find a recipe that wouldn’t take too long.
I was ecstatic when I came across a recipe for no rise pizza crust.ย ย I had all the ingredients on hand and it looked simple.ย ย I was concerned that it wasn’t going to taste good because there was no rising time but by this point my husband and I were so hungry.
I quickly whipped up a batch, kneaded it, and rolled it out.ย I had some trouble getting it to shape to the pan because it didn’t want to stretch.ย ย However, after about 5 minutes it stretched and held its shape.ย ย I baked it for 5 minutes then removed it to put on the toppings.ย ย I popped it back in for 15 minutes and crossed my fingers.
When I took it out of the oven it looked golden brown and it seemed to have risen in the oven.ย I cut it up, put it on a couple of plates, and dinner was ready in under 30 minutes.ย I was tentative to try it but surprisingly it was really good!ย ย It wasn’t crispy like the crust I normally make, but it was soft and delicious.ย ย The edges were crispy and the pizza held up to the toppings.ย ย For not rising, it was really good.ย My husband even said it was better then the refrigerated pizza crust I normally buy!
This will now be in our repertoire for a quick and easy “on the fly” pizza crust.ย I’m very excited it turned out well because now we can have pizza all the time!
Easy No-Rise Pizza Crust
Ingredients
- 1 package dry active yeast
- 1 Tablespoon sugar
- 1 c. warm water 110 degrees
- 2 1/2 c. flour
- 2 teaspoons olive oil
- 1 teaspoon salt
Instructions
- Preheat oven to 450 degrees. In a medium bowl dissolve the yeast and sugar in warm water. Let stand until bubbly, about 10 minutes.
- Stir in the flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
- Turn the dough onto a lightly floured surface and roll into a ball. Place crust to a lightly greased pizza pan dusted with cornmeal.
- Bake for 5 minutes.
- Remove from oven and spread with desired toppings. Bake for 15-18 minutes or until the crust is brown.
- Remove from oven and cool 2 minutes before cutting.
