Fiesta Chicken Burrito Bowls combine chicken with all of your favorite burrito toppings in a bowl over top of rice!
We eat Mexican at least once a week.ย ย It’s easy to make and we can use beef, chicken, pork, or tofu in just about any of the dishes I make.
I make a yummy Beef Enchiladas with Red Chili Sauce.ย On days when I know I’m going to be super busy at night I like to put chicken in my Crock-Pot and make these Slow Cooker Chicken Tacos.
In the summertime we like to grill Pork Fajitas.ย ย Finally, when I am looking for a vegetarian meal but I still want Mexican I make Tofu Tacos with Asian Slaw.
Now these are all great meals and things that we make regularly but I don’t like how many calories come with the flour tortillas or tortilla chips.ย ย I’ve found the best way to have all the flavors of a burrito with less calories is to make a tasty burrito bowl.
WHat is a BUrrito Bowl?
A burrito bowl is a dish that includes all the ingredients usually found in a burrito, but it is served in a bowl rather than wrapped in a tortilla.ย The base of the bowl can be either rice or lettuce. Then a protein goes on top of that.ย Usually the bowl is filled with beans, cheese, vegetables, toppings, and a sauce.ย ย It’s customizable to what you like to eat.
I like making chicken burrito bowls and this recipe has the best rub I’ve had on Mexican style chicken.ย ย It’s spicy and has so much flavor.ย ย It would be great to put on a steak for steak carnitas as well.
Ingredients:
- chicken breasts
- olive oil
- ground cumin
- chili powder
- paprika
- Penzey’s Arizona Dreaming seasoning (optional but so good)
- salt and pepper
- rice
- lettuce
- tomatoes
- cheddar cheese
- salsa
- tortilla strips
To make the burrito bowls combine the olive oil, cumin, chili powder, paprika, Arizona dreaming, salt, and pepper in a bowl. Rub the mixture all over the chicken breasts, place in a shallow dish, and refrigerate for at least one hour or up to 24 hours.
Can I use a different protein in this dish?
Yes!ย This rub would be great on pork chops or a pork loin (cooking time will be longer with a pork loin), beef, or even tofu.ย ย Cook times will vary but any of these proteins work work in the burrito bowls.
When you are ready to make the chicken heat the remaining olive oil in a skillet over medium heat.ย ย Add the chicken breasts and saute them for 10 minutes or until they are cooked to temperature.ย ย Remove to a cutting board and cut into strips.
Then combine all of the ingredients for the avocado cream sauce and mix in a food processor until smooth.
To make the actual bowl place a half cup of rice or one cup of lettuce at the bottom of four bowls.ย Top with chicken, tomatoes, cheese, salsa, and tortilla strips.ย You can also use crushed tortilla chips if you do not have tortilla strips. Drizzle the bowls with the avocado cream sauce.
Can I use different toppings?
Yes!ย ย Use your favorite burritos toppings.ย This can include a variety of different cheeses, pico de gallo, or guacamole.ย ย For vegetables you can add refried beans, black beans, corn, bell peppers, or red onions.ย Top the bowls off with sour cream, Ranch dressing, or your favorite enchilada sauce.
The thing I love about these chicken burrito are that you can customize them to your taste.ย I started with the spiced chicken and then put the toppings out on our kitchen table.ย I served bowls with rice and chicken in them then let everyone else fill their bowl however they like!
This is a great recipe if you have friends coming over because everyone can have their bowl the way they want it.
The avocado cream sauce is a must with this recipe.ย It adds a cool, refreshing flavor to the spiciness of the chicken in the bowls.
If you don’t like rice simply put the chicken and toppings on lettuce for a chicken burrito salad.ย ย You can then thin out the avocado cream sauce and turn it into a dressing for your salad.
Fiesta Ranch Chicken Burrito Bowls
Ingredients
For the chicken:
- 1 lb. chicken breasts
- 2 Tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon Arizona seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
For the avocado cream sauce:
- 1 avocado
- 1 1/2 Tablespoons Ranch dressing
- 1/2 c. plain Greek yogurt
- 1 Tablespoon lime juice
- 1 teaspoon chili powder
For the burrito bowls:
- 2 c. rice cooked
- lettuce tomatoes, cheese, salsa, tortilla strips
Instructions
- In a small bowl combine 1 tablespoon olive oil, cumin, chili powder, paprika, Arizona seasoning, salt, and pepper.
- Rub the spices over chicken breasts and refrigerate for 1 hour.
- When ready to cook add the remaining olive oil to a skillet and heat over medium heat.
- Add the chicken breasts and saute for 10 minutes or until cooked through. Remove to a cutting board and slice the chicken.
- Meanwhile, combine all of the ingredients for the avocado cream sauce in a food processor and process until smooth.
- To make the bowls put 1/2 cup of rice in the bottom of 4 bowls. Top with the chicken, lettuce, tomatoes, cheese, salsa, and tortilla strips.
- Drizzle the bowls with the avocado cream sauce.

what is arizona spice blend and where can I find it?
It’s my FAVORITE Mexican spice. You can get it at Penzey’s. They have stores or you can get it online. I put it in all of my Mexican dishes. It’s awesome.
