Greek Chicken Salad with Creamy Dressing

Fresh, crisp, and full of Mediterranean flavor! Greek Chicken Salad is loaded with juicy chicken, crunchy veggies, tangy feta, and a light, creamy dressing that brings it all together. It’s perfect for lunch or a light dinner.
I really enjoy cooking but I don’t always have the time to make the things I want to especially since I like to cook healthy. Sometimes there just isn’t time to make a big elaborate meal. That’s when I usually try to make a tasty and delicious salad for dinner.
Now I have my favorite entree salads that I make on the regular. A good Cobb Salad is a favorite of my husband. My personal favorite is a Steakhouse Salad with Homemade Ranch Dressing. One of the newest salads on our entree salad rotation is the Big Mac Salad Bowl which can be served with or without fries.
Whenever I make entree salads for dinner I try to pile on the veggies and make sure we have a protein on top. I also like to make my own dressing because I think it really adds something to a salad.
How do you make a great entree salad?
Making a great entree salad is all about pairing the right ingredients together.  To start with you need a nice base of lettuce along with your favorite vegetables. Next, decide on the protein you’d like to put on top. Then pair a cheese those goes along with that protein. Finish is off by choosing crunchy elements like nuts, croutons, sesame sticks, or other toppings or add in some fresh or dried fruit. If you want to really go the extra mile make your own dressing to go with it!
I decided to go with a Greek Chicken Salad because I had taken chicken out of the freezer and knew I had feta, Greek yogurt, and pitas in the house.
I seasoned the chicken with oregano, dill, and garlic powder.  Then I went to look for vegetables that would work well in this salad. I decided on red onions, artichoke hearts, cucumbers, and mild pepper rings.
I wasn’t sure what to do with the pita so I cut it up and put it on the side so that I could use it to scoop up the salad. I also served this salad with a side of hummus that could be used on top of the salad or with the pita.
The last thing I wanted was to make a creamy salad dressing. I had a base of Greek yogurt and added olive oil, red wine vinegar, garlic, dill, oregano, and feta cheese to make a creamy yet tangy dressing.
Can I use a prepared dressing?
Sure!  If you don’t want to make your own dressing there are some great dressings out there that would work well with this salad. A Greek vinaigrette, red wine vinaigrette, a creamy yogurt dressing, or even an Italian dressing would work well with this salad.
Ingredients:
- boneless, skinless chicken breasts
- salt and pepper
- oregano
- garlic powder
- romaine lettuce (or your favorite mix of greens)
- mild pepper rings
- red onion
- artichoke hearts (I like the marinated artichoke hearts but any will work)
- cucumber
- feta cheese
- pita bread
This Greek Chicken Salad with Creamy Dressing is fresh, tasty, and really filling. I like how well the dressing goes with the chicken. The dressing is tangy from the vinegar but the Greek yogurt makes it creamy and mellows it out.
While the chicken can be grilled I simply made it in a skillet on the stove. I thought that would be faster and easier since I wouldn’t have to wait for the grill to heat up.
You can cook the chicken a day ahead of time if you want and the salad can be made a day in advance as well. I ended up making the salads as soon as I got home from work then cooked the chicken and whipped up the dressing once we were ready to eat.
Can I use a different protein?
You sure can! Grilled shrimp, a lemon dill salmon, or crispy falafel would be great meatless options.  You can also have marinated steak, lamb, or even tuna on top of this salad.
I served the salads with pita bread on the side which I thought was a great addition. It tasted good with the creamy dressing and it helped the entree salad to be a little more filling. My husband really enjoyed the salad because it was filled with peppers, onions, cucumbers, and feta which are some of his favorite things.
I think this Greek salad ended up taking me about 20 minutes to make from start to finish and we didn’t need any side dishes with it. This would be a good salad to have in the summer since you don’t have to turn on the oven and it’s fairly light but filling. However, you can warm up the pita bread and serve it in the winter as well. I love a salad that is versatile and can be enjoyed any time of year!

Greek Chicken Salad with Creamy Dressing
Equipment
Ingredients
For the dressing:
- 1/4 cup extra virgin olive oil
- 1/3 cup plain Greek yogurt
- 1/4 cup red wine vinegar
- 1 Tablespoon lemon juice
- 1 Tablespoon oregano
- 2 garlic cloves chopped
- 1 teaspoon salt
- 3 Tablespoons feta cheese crumbled
For the salad:
- 8 cups romaine lettuce
- 1/4 cup Mild pepper rings
- 1 red onion chopped
- 2 small cucumbers chopped
- 8 ounces marinated artichoke hearts quartered
- 1 pound chicken breasts
- salt and pepper
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 3/4 cup feta cheese
- 4 pitas
Instructions
- Place all the dressing ingredients in a bowl and whisk until combined. Refrigerate until ready to serve.
- To make the salad toss the lettuce, pepper rings, onion, cucumber, and artichokes in a large bowl. Set aside.
- Heat a saute pan over medium high heat and add 1 tablespoon olive oil.
- Sprinkle the chicken with oregano, garlic, salt, and pepper.
- Place the chicken in the pan and cook for 5 minutes per side or until cooked through.
- Remove the chicken from the pan and cut into strips.
- Divide the lettuce between 4 plates. Arrange the chicken on top of the salads along with feta cheese. Cut each pita into 8 triangles and place around the salads.
- Serve with the creamy dressing.

Great flavors in this loaded salad! This is a scrumptuous meal.
Sometimes on road trips I stop for a rotisserie chicken and we make the leftovers into chicken salad sandwiches. Heading to Yosemite this week so this will come in handy!
I love Greek salads! Artichokes and a touch of heat from the peppers definitely kicks it up a notch!
