There is nothing like grilling out in the summer. The smell of the food cooking on the grill, the flavor of grilled cuisine, and the ease of clean up all signal summer to me. While we grill out several times a week for ourselves we often invited friends over for cook outs or summer parties.
I like to have a variety of choices for my friends when they come over especially since I have friends who are gluten free, friends who are vegetarians, and friends with other allergies. That’s why I try to have a meat option, a veggie option, and a gluten free option. This means I have to think out of the box when it comes to appetizers and main dishes.
Veggie burgers have always been high up on my list of vegetarian options for cook outs because they grill up well and people can top them however they’d like. We have always enjoyed MorningStar Farms® as a healthier meal solution for any occasion, especially cook outs and meatless Monday. For dinner we like these veggie burgers cooked on the grill then placed on a bun with our favorite burger toppings but I wanted to do something a little different because we were having guests. I decided to use the Veggie Lovers Burgers for an appetizer. I wanted something that was easy, flavorful, and made entirely on the grill. I came up with these Grilled Spinach Caprese Veggie Burger Stacks.
These Veggie Burger Stacks are awesome because they grill up in about 10 minutes and require very little prep work. That means they are an awesome appetizer for when friends come over. I simply skewered some cherry tomatoes then placed the skewer on the grill along with the Veggie Lovers Burgers. I let them cook and then the last few minutes I piled mozzarella cheese and spinach on top of the veggie burgers and then sliced up the blistered tomatoes to put on top. A drizzle of balsamic vinegar and these delicious appetizers were ready to go!
The Grilled Spinach Caprese Veggie Burger Stacks were so flavorful, delicious, and filling. They are perfect for cook outs because they are easy to carry around on a small plate and cut with a fork. The mozzarella cheese added a creaminess while the tomatoes added a bit of acidity and the balsamic vinegar added a dose of flavor. They were so good even a few of our meat loving friends gobbled one up!

Grilled Spinach Caprese Veggie Burger Stacks
Ingredients
- 4 MorningStar® Farms Veggie Lovers Burgers
- 1/2 c. cherry tomatoes
- 1/2 c. mozzarella cheese shredded
- 1/2 c. fresh spinach
- 2 Tablespoons balsamic vinegar
Instructions
- Heat the grill to medium heat.
- While the grill is heating up skewer 16 cherry tomatoes on 2 skewers.
- Place the veggie burgers on the grill along with the tomato skewers. Cook for 4 minutes then flip both the burgers and the tomato skewers.
- After another 2 minutes remove the tomato skewers from the grill.
- Divide the mozzarella cheese between the 4 veggie burgers and shut the lid on the grill. Cook for 2 minutes.
- Divide the fresh spinach on top the veggie burgers, shut the lid, and cook for 2 more minutes.
- Remove the veggie burgers from the grill.
- Carefully take the blistered tomatoes off of the skewers and cut in half. Place 6-8 halves on top of each veggie burger. Drizzle with the balsamic vinegar.
- Serve immediately.
