Homemade Fried Rice

Forget getting take out; make your own delicious Fried Rice at home with carrots, peas, fried egg, and plenty of flavor!

Whenever we order Chinese out I usually get fried rice because it’s something I don’t make at home very often.   At home I tend to make jasmine or basmati rice because it is easy to make and goes well with most of my Asian inspired meals.

I make a lot of Asian meals at home.  In fact, my husband says it is the best thing I make.   While a lot of my meals are Chinese, I also have several really good Korean and Japanese dishes as well.

The dish I make the most is probably Korean BBQ Tofu bowls because it has a protein, vegetables, and rice all in one bowl.   When I want copycat take out I always go for Bourbon Chicken and vegetables over top of rice. While I don’t eat a lot of beef when I’m cooking Asian I do like the traditional Beef and Broccoli over top of rice.

So the last time we got take out a quart of fried rice was close to ten dollars.   I finally said that’s way too much and started looking for a recipe I could make myself at home.  While I love fried rice, I don’t love it for the price I can pay for an entire meal with a protein. 

What is fried rice?

Fried rice is a popular dish made from cooked or leftover rice.   It  is stir-fried in a wok or frying pan. Usually it has vegetables, eggs, and various seasonings or sauces.   It can also have meat or seafood in it as well.  Fried rice is enjoyed in many different cultures and has many variations.

The great part about this rice is that the actual rice can be made and chilled up to 48 hours in advance.  That helps cut the time in half.

I used a simple carrot and pea frozen vegetable blend for the veggies. You can also use fresh carrots and canned peas if you prefer.  Then I added in diced onion to give it more flavor.

Can I add more veggies?

You can add up to 2 more cups of fresh or frozen vegetables to the fried rice.  If you enjoy stir fried vegetables then load it up.  Include green onions, broccoli, or peppers to your fried rice. 

The ingredients for this rice are pretty simple and they are things that I always have on hand which makes this a great recipe.    You can enjoy fried rice on its own or as a side dish.

Ingredients for making Fried Rice

Ingredients:

  • cooked white rice (you can also use jasmine rice)
  • sesame oil
  • frozen peas and carrots mix (in a bag in the freezer section)
  • onion
  • garlic cloves
  • teriyaki sauce
  • eggs
  • soy sauce (we prefer low sodium)
  • salted butter

To make the rice heat the sesame oil in a medium skillet over medium high heat. Add in the frozen peas, frozen carrots, onion, and garlic. Stir fry until the vegetables start to become tender.

Push the vegetables to one side of the pan.   Crack two eggs in a small bowl and beat.   Pour the eggs onto the other side of the pan and scramble.

Add the cooked rice, teriyaki sauce, and soy sauce to the pan.  Mix well and stir fry for 2-3 minutes or until the rice is heated through.

Place the butter in the center of the pan and allow it to melt.   Stir it into the rice and cook for an additional minute.   Serve hot.

Can I add a protein to the fried rice?

You can certainly add a protein to the rice.  A cup of diced chicken, diced pork, or shrimp can be added when the rice is added to the pan.  Make sure it is already cooked so it just needs to heat up along with the rice. 

This fried rice is really flavorful and so easy to make.   You can make it with leftover rice, cook the rice before you begin, or make the rice and refrigerate it up to 2 days prior to making the fried rice. 

How do you store fried rice?

Store fried rice in an air tight container in the refrigerator for up to 4 days.   When ready to eat you can stir fry it in a little bit of sesame oil or butter.   You can also microwave fried rice to reheat.

Homemade Fried Rice

Ingredients

  • 1 Tablespoon sesame oil
  • 1 c. frozen peas and carrots
  • 1/2 small onion chopped
  • 2 t. minced garlic
  • 2 eggs beaten
  • 2 c. white rice cooked
  • 1 Tablespoon teriyaki sauce
  • 1/4 c. soy sauce
  • 2 Tablespoons salted butter

Instructions

  • Heat the sesame oil in a medium skillet over medium high heat. Add in the peas, carrots, onion, and garlic. Stir fry until tender, about 7 minutes.
  • Push the vegetable mixture off to one side of the pan. Pour the beaten eggs on the other side of the skillet and stir fry until scrambled.
  • Add the rice, teriyaki, and soy sauce to the pan. Stir well and cook for an additional 2-3 minutes or until the rice is heated through.
  • Add the butter to the pan and allow it to melt. Stir fry with the rice for another minute.
  • Serve rice hot.
