Ube Cool Whip Cookies

Soft, dreamy, and perfectly purple these ube cookies are light, fluffy, and melt in your mouth. They are delicious with that sweet, nutty ube flavor in every bite. Rolled in powdered sugar for that crackly finish, they’re as pretty as they are irresistible!

I watch a lot of baking shows and competitions on tv.   It helps me keep up to date on all the new fads of baking and the amazing traditional sweets as well. 

Unless you’ve been living under a rock you know that ube has been all the rage for the last few years.  You can find it in cookies, cakes, coffee, and donuts. 

What is ube?

Ube is a purple yam commonly used in Filipino desserts. It’s known for its vibrant violet color and naturally sweet, slightly nutty flavor.  

I recently ordered ube extract to use in my baked goods.  I wanted to make cookies because I knew cookies would be easy and they are such a blank slate that whatever flavor you put into them you are going to taste. 

Normally I would go for my plain cookie dough that I use with a variety of mix ins but then I remembered that I had been wanting to make Cool Whip Cookies and I knew I had two tubs of Cool Whip in the freezer. 

The base of the Cool Whip cookies are a boxed cake mix.  I have made several cake mix cookies.  Funfetti Cake Mix Cookies are easy to make and you can add all the extra sprinkles that you want.  Chocolate Cake Mix Cookies are tasty and I like to add chocolate chips or M&M’s to the batter. I’ve even made Cake Mix Biscotti. 

What are cool whip cookies?

Cool Whip cookies are cookies that are simply made with Cool Whip, a box of cake mix, and eggs.  Then you can add extracts, chocolate chips, or other flavored chips to help make the cookies your own.  These cookies are super soft, slightly chewy, and a little cake like.

I love that these cookies are simply made with Cool whip, cake mix, and eggs.  You can use either a white or yellow boxed cake mix and then use extract and chips to flavor it. 

I used the ube extract which made the cookies purple and gave them a nutty, vanilla flavor.  I thought chips might be nice in them as well and so I added in white chocolate chips for color and sweetness. 

Do I have to add the white chocolate chips?

You do not have to add the white chocolate chips to these cookies. If you want to add another type of chip butterscotch would add a rich, sweet flavor or milk chocolate chips add a rich, dessert feeling to the cookies.

Ingredients:

  • Cool Whip (or other frozen whipped topping)
  • boxed cake mix (either white or yellow cake mix)
  • eggs
  • ube extract
  • white chocolate chips
  • powdered sugar

Preheat the oven to 350 degrees.   In a large bowl combine the cool whip, boxed cake mix, and eggs.  Stir well.  Add in the ube extract and chocolate chips and mix until combined.

Place the powdered sugar in a bowl.  Use a small, 1 Tablespoon cookie scoop and scoop out the dough.  Roll it into the powdered sugar and place on a baking sheet 2 inches apart. Bake for 10 minutes. Remove from oven, let cool one minute, then remove to a wire cooling rack to cool completely. 

These cookies were delightful!  The bold purple cookies with the white chocolate chips were gorgeous.

The ube cookie was light and fluffy and melted in my mouth.  It tasted slightly nutty, rich and sweet from the white chocolate, and had hints of vanilla in it.  I was pleasantly surprised by the flavors. 

How do you store the ube cookies?

Store the cookies in an air tight container at room temperature for up to 4 days.  You can also freeze them in a freezer bag in the freezer for up to 3 months.

Ube Cool Whip Cookies

Ingredients

  • 1 box 15.25 oz white or yellow cake mix
  • 2 cups Cool Whip thawed
  • 1 egg
  • 2 teaspoons ube extract
  • 1 cup white chocolate chips
  • 1/2 cup powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl combine the cake mix, Cool whip, egg, and ube extract. Mix well.
  • Fold in the white chocolate chips.
  • Place the powdered sugar in a small bowl.
  • Using a 2 tablespoon cookie scoop scoop the dough into balls and roll in powdered sugar. Place 2 inches apart on the cookie sheet.
  • Bake for 8-10 minutes.
  • Remove from oven and cool for 2 minutes before transferring them to a wire cooling rack.
