Mondays are usually a busy day for me.   I spend most weekends baking in the kitchen so by the time Monday rolls around I’m ready to do some cooking.   However, I also stay after school for aerobics so I get home a little bit later then usual.  That means once I’m home I want to make something quickly and then relax.

This quick and tasty Lemon Garlic Pork and Broccoli Rice Bowl is a delicious weeknight meal.

This Lemon Garlic Pork and Broccoli Rice Bowl is an easy dish to make.   There aren’t a whole lot of ingredients and the ones that are in it are ones I always have in the house so no trip to the store is needed.  While the original recipe just had broccoli in it, I added in some fresh peas and an onion as well.

This dish comes together quickly as the rice cooks while the pork and vegetables are cooking.  That means everything is ready in about 20 minutes.  I find cutting the vegetables the day before helps speed everything up.

The pork and vegetables are cooked in a honey soy sauce. It’s a bit sweet but the lemon juice adds a note of sour to the sauce.  While there are only a handful of ingredients it’s a complex flavor.   It tastes great over top of a bowl of rice and served with an eggroll.

Lemon Garlic Pork and Broccoli Rice Bowl

This pork and vegetable dish is served in a honey lemon soy sauce over top of rice.

Ingredients

  • 1 c. uncooked rice
  • 1 c. water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 Tablespoon olive oil
  • 2 c. broccoli florets
  • 1 lb. pork tenderloin cut into 3/4 inch pieces
  • 1 Tablespoon cornstarch
  • 3 Tablespoons butter
  • 3 Tablespoons soy sauce
  • 5 garlic cloves, minced
  • 1 small onion, minced
  • 1 c. fresh peas, cut into 1 inch pieces
  • 1/2 c. chicken stock
  • 1 Tablespoon lemon juice
  • 1 teaspoon honey

Instructions

  1. Add the rice, water, salt, and black pepper in a large pot and cook according to package directions.
  2. Heat 1 teaspoon of oil in a large skillet over medium high heat. Add broccoli and cook for 3 minutes. Remove from pan.
  3. Combine the pork and the cornstarch. Toss to coat.
  4. Add remaining oil to the skillet over medium high heat and add in the pork. Cook for 4 minutes.
  5. Add in 1 tablespoon of butter, soy sauce, garlic, onions, and peas. Saute for 3 minutes.
  6. Stir in remaining butter, chicken stock, lemon juice, honey, and broccoli. Cook for 3-4 minutes or until everything is cooked through.
  7. Serve over top of rice.
