Red, White, and Blue Ice Cream Sandwiches

Give your favorite ice cream sandwiches a boost with red, white, and blue candy melts and some edible pearls.
Let’s be honest. It gets hot in the summer. While I love to bake cakes, cookies, and cupcakes it isn’t always possible with the summer heat. So for the patriotic holidays I went looking for something that I didn’t have to bake and that would help us cool off.
I saw a super cute picture of an easy flag design on an ice cream sandwich and thought that was a fun idea. I like that it was an individual dessert and that I didn’t actually have to make anything. All I had to do was decorate the ice cream sandwiches.
You really need to work with one color of candy melts at a time and be able to freeze the ice cream sandwiches in between each color you use so that they don’t melt. I started with the blue because you need to make a square on the left side with it.
I unwrapped the ice cream sandwiches and put them on a large cutting board. I quickly worked to put a blue square on each one then sprinkled white pearls on top of the blue. Then I popped them back in the freezer.
While they were chilling I melted the white candy melts. Be careful when melting them. You want them to be just melted. Once this happens put the candy into a zip top baggie, snip off the end, and grab your ice cream sandwiches. Quickly make horizontal squiggles on the ice cream bars. Put them back in the freezer.
Repeat with the red candy melts and then put them in the freezer to chill for 30 minutes. Once this time is up wrap each sandwich in plastic wrap and store in the freezer until ready to use.
I found these to be super easy to make and they looked really cute. Put them in a cooler and take them to your next outdoor party or gathering. They are sure to put a hit!

Red, White, and Blue Ice Cream Sandwiches
Ingredients
- 8 ice cream sandwiches
- 4 oz. blue candy melts
- 2 oz. red candy melts
- 2 oz. white candy melts
- edible pearls
Instructions
- Unwrap the ice cream sandwiches and put them on a cutting board. Put them back in the freezer.
- Place the blue candy melts in a microwave safe bowl. Melt in 20 second increments, stirring after each heating, until the candy is melted.
- Put the blue candy in a zip top baggie and cut off the corner.
- Take the ice cream sandwiches out of the freezer. Pipe a blue square on the left side of each sandwich. Quickly sprinkle edible pearls on top of the blue. Place back in the freezer.
- Place the red candy melts in a microwave safe bowl. Melt in 20 second increments, stirring after each heating, until the candy is melted.
- Put the red candy in a zip top baggie and cut off the corner.
- Take the ice cream sandwiches out of the freezer. Pipe a horizontal squiggle from top to bottom on the part of the ice cream sandwich that isn't covered in blue. Put back in the freezer.
- Place the white candy melts in a microwave safe bowl. Melt in 20 second increments, stirring after each heating, until the candy is melted.
- Put the white candy in a zip top baggie and cut off the corner.
- Take the ice cream sandwiches out of the freezer. Pipe a horizontal squiggle from top to bottom on the part of the ice cream sandwich that isn't covered in blue. Put back in the freezer.
- Freezer 15 minutes. Remove from freezer and wrap each sandwich in plastic wrap.
- Return to the freezer until you are ready to eat!
