Sausage, Egg, and Cheese Breakfast Casserole

Over the past few years I’ve learned that when people say breakfast is the most important meal of the day they are correct. I’ve found that eating a good breakfast really helps to fuel me throughout the day. Sometimes in the summer I’m so busy I forget but this summer I’ve been making the time to eat breakfast every morning. It’s true that good mornings lead to great days!

I can put it together and get it in the oven in about 10 minutes and then a half hour later when I’m ready for my second cup of coffee it’s ready to eat! I like to pair my breakfast casserole with an English Muffin and my husband enjoys a side of fruit salad with his breakfast bowl. Sausage, Egg, and Cheese Breakfast Casserole
Ingredients
- 4 eggs lightly beaten
- 3/4 c. milk
- 4 oz sharp cheddar cheese grated and divided
- 1 orange bell pepper chopped
- 1/2 onion chopped
- 6 Jimmy Dean Fully Cooked turkey sausage links chopped
- 1 teaspoon black pepper
- 1 teaspoon sea salt
- 1 Tablespoon fresh herbs chopped
Instructions
- Preheat the oven to 400 degrees.
- Spray an 8 x 8 baking dish with cooking spray and set aside.
- In a large bowl combine the eggs and the milk and beat until well combine.
- Add 1/3 cup of the cheese, the pepper, onion, and turkey sausage. Gently combine.
- Fold in the pepper, salt, and herbs.
- Pour the mixture into the prepared pan and sprinkle with remaining cheese.
- Bake for 30 minutes or until the top is beginning to brown and the center is set. Allow to cool for 5 minutes then cut and enjoy.
