Slow Cooker Chicken Tikki Masala

ย ย ย ย I really enjoyed this dish.ย The chicken was juicy and full of spices.ย The color was even attractive.ย I served it over rice which made for a filling meal.
Slow Cooker Chicken Tikki Masala (adapted from Smells Like Home)
5 boneless, skinless chicken thighs
1 T. ground coriander
1 T. ground cumin
1 t. salt
ยฝ t. red pepper
1 c. non-fat Greek yogurt
1 jalapeno, seeded and minced
For the sauce:
2 T. butter
ยฝ large onion, diced
6 cloves garlic, minced
1 T. salt
3 T. garam masala
1 T. fresh ginger, minced
1 t. black pepper
4 c. diced tomatoes
1ย T. sugar
3 T. heavy cream

2. Melt the butter in a medium sautรฉ pan. Add in the onions, garlic, salt, and pepper. Cook for 5 minutes.
3. Stir in the garam masala and ginger and cook until fragrant, one minute. Stir in the tomatoes and sugar. Stir well, scraping the caramelized bits from the bottom of the pan, bring to a boil. Pour over top of the chicken in the slow cooker.
4. Cover and cook on low for 6-8 hours.
5. Fifteen minutes before serving pour in the heavy cream and gently stir. Replace the lid and cook for 15 additional minutes.
6. Serve over rice.

I have never made this, but I am surprised to see jalapenos in the ingredient list. That along with the garam masala does make for a very flavorful dish. I will need to try this in my crock pot! Have a great day!
