
Baked Southwest Rollups (adapted from The Adventures of Mini-Martha)
For the Rollups:
1 T. olive oil
½ onion, diced
2 cloves garlic, minced
3 boneless, skinless, chicken breasts, cut into 1 inch pieces
1 green pepper, diced
4 oz. green chile peppers, diced
1 tomato, chopped
1 can black beans, rinsed and drained
1 c. corn
10 oz. frozen spinach, thawed and chopped
1 t. cumin
1 t. chili powder
¼ c. cilantro, chopped
1 t. salt
3 T. lime juice
1 c. cheddar cheese, shredded
1 c. pepper jack cheese, shredded
8 flour tortillas
For the dipping sauce:
½ c. low fat sour cream
½ c. Greek yogurt
½ c. salsa
½ t. cayenne pepper
1 t. salt
1. In a small bowl combine the dipping sauce ingredients. Mix well and refrigerate until ready to serve.
