During the school year I usually get pretty busy and don’t have a ton of time to bake.   I’m home on the weekends but I’m usually spending that time with my son.  While he likes to help bake on occasion it doesn’t hold his attention for too long.

Most weekends we make a simple cookie or I have him help me decorate whatever it is I’ve baked.  He likes to do it and it allows me to bake and spend time with him.

However, it’s much easier when we make a simple cookie or brownie.  These Easy Chocolate Cake Mix Cookies are so fun to make because they have just a handful of ingredients and most of them don’t need to be measured so my son can just dump everything in and mix.

Ingredients:

  • chocolate cake mix
  • eggs
  • vegetable oil
  • vanilla
  • Dark Chocolate Mint M&M’s

To make these cookies mix the cake mix, eggs, oil, and vanilla together in a bowl.

Add in the M&M’s and mix until combined.  Chill the dough for 1 hour.

Preheat the oven to 350 degrees.

Roll the dough into 1 inch balls and place on a cookie sheet.  Bake for 8-10 minutes.

These cookies end up rich and fudgy and super delicious.   I was really surprised by how good they tasted.   I’m not a huge fan of semi-homemade baking and using a cake mix for cookies seemed a little out there but they were good.

The cool thing about these cookies is that you can change the color of the M&M’s to match any holiday or event and you have another new cookie.

Do I have to use chocolate cake mix?

No!   Use whatever flavor you want!   Go for vanilla, lemon, spice, strawberry, or even Funfetti.

Do I have to use mint M&M’s?

Of course not.  Use your favorite flavor of M&M’s.   Go for original

Can I use something besides M&M’s?

Yes!   Substitute in chocolate chips, white chocolate chips, Andes baking chips, Heath chips, or anything else you want to mix in.

What are some other combinations I can make?

Lemon cake mix with white chocolate chips, vanilla cake mix with chocolate chips or M&M’s, German Chocolate Cake mix with coconut flakes or caramel chips, or strawberry cake mix with white chocolate chips are all great combinations.

These cookies are so soft and rich.  The mint in the M&M’s really lightens up the cookies which is nice.  I think regular M&M’s in this cookie would be a little much.

We used the green colored ones because I made these for St. Patrick’s Day but they would also be great with red and green M&M’s for Christmas.

Easy Chocolate Cake Mix Cookies

Easy Chocolate Cake Mix Cookies take a chocolate cake mix combined with mint chocolate M&M's for an outrageously delicious cookie!

Ingredients

  • 1 box (15.25 oz) chocolate cake mix
  • 2 eggs
  • 1/2 c. vegetable oil
  • 2 teaspoons vanilla
  • 1 1/2 c. chocolate mint M&M's

Instructions

  1. In a large bowl mix together the cake mix, eggs, oil, and vanilla.
  2. Add in the M&M's and mix until well combined.
  3. Chill the dough in the refrigerator for 1 hour.
  4. Preheat the oven to 350 degrees.
  5. Roll the dough into 1 inch balls and place on a cookie sheet.
  6. Bake for 8-10 minutes or until set.
