Easy Strawberry Scooter Crunch Cake

Starting with a box cake mix this Strawberry Scooter Crunch Cake will take you back to summers with your favorite ice cream bar. The strawberry vanilla crunch topping tastes just like the outside of the famous ice cream bar.

In elementary school it was a huge treat to be able to buy something from the ice cream cart.   Every day they would tote it out and it would have different treats on it.   Once a week I would get money to buy an ice cream and it was the best day of the week.

Since the ice cream wasn’t always the same it was a huge treat whenever they had Strawberry Scooter Crunch Bars.   A lot of my friends liked the chocolate ones but I was a fan of the strawberry. 

Strawberry Scooter Bars are basically strawberry ice cream wrapped in vanilla ice cream with strawberry crunch on the outside.   They are the perfect bite of summer.

So when I saw a recipe for a cake with these same flavors I was so excited.  I doubted that anything could touch my memory of the original but I was willing to give it a try.

Ingredients:

  • Golden Oreos (don’t use anything else-this helps with the crunch flavor)
  • Strawberry Jell-O (use the box with sugar, don’t go sugar free)
  • butter
  • Yellow Cake Mix (or you can use white cake mix)
  • milk
  • strawberry jam
  • Cool Whip (use the regular, not light or fat free)
  • powdered sugar

The first thing I did was make the crunch topping.  I figured with it only being three ingredients there was no way it would taste like the scooter crunch I remembered.

Golden Oreos are crushed in a food processor until they are in little pieces then the butter and jello is mixed in.   Then the mixture is baked.

When it came out of the oven I took a bite to see how it was.  I was SHOCKED that it tasted exactly like strawberry scooter crunch!  In fact I couldn’t stop eating it.  Thankfully there was plenty so I was able to eat some and still have enough for the cake.

What is Strawberry Scooter Crunch?

Strawberry Crunch Bars are made by the Hershey’s Ice Cream.  They are strawberry ice cream covered with vanilla ice cream topped off with a strawberry cake crunch. 

Can I use a different flavor of cake mix?

The only flavors you can use are yellow, white, or vanilla cake as you want a plain flavor so that the strawberry will shine through.  You could use a strawberry mix but it may overpower the strawberry crunch.

How do I store the cake?

Once you put the Cool Whip frosting on the cake you’ll need to cover it and put it in the refrigerator.  It will last up to 4 days.   Don’t put the topping on until you are ready to eat it.  Although it’s best eaten within a few hours you can cover the top with the crunch topping on it and store it in the refrigerator.

Once the crunch was made I baked the cake.  I chose to go with a yellow cake mix because I like the texture better than a white cake mix.

With the cake mix two-thirds of it stays the yellow or white cake flavor while strawberry jam is mixed into the other third.  The strawberry batter is swirled on the top then the cake is baked.

Once the cake has cooled the sweet Cool Whip frosting is spread over the entire cake.  Then the strawberry crunch is sprinkled over the top.

This cake is so good!   Ok, actually it’s the frosting and topping that are so good.  The cake is fine but the topping is what makes it.

I took it to Easter and my family raved about it.  My cousin said it tasted like ice cream day in elementary school.  Everyone at my work couldn’t get enough of the strawberry crunch topping.

Strawberry Scooter Crunch Cake

Ingredients

For the topping:

  • 2 dozen Golden Oreos
  • 1 3 oz box strawberry gelatin
  • 1/3 c. butter

For the cake:

  • 1 box yellow cake mix
  • 3 eggs
  • 1 c. butter melted
  • 1/2 c. milk
  • 1/2 c. strawberry jam
  • 1 12 oz tub Cool Whip
  • 3/4 c. powdered sugar

Instructions

  • Preheat the oven to 325 degrees.
  • Place the Oreos in a food processor and pulse until the pieces are small.
  • Add in the strawberry gelatin and butter and pulse a few more times to combine.
  • Pour the mixture onto a baking sheet and bake for 10 minutes. Remove from oven and cool completely.
  • Increase oven temperature to 350 degrees.
  • Spray a 9 x 13 pan with baking spray and set aside.
  • In a large bowl combine the cake mix, eggs, milk, and melted butter. Whisk until batter is mostly smooth.
  • Pour 2/3 of the cake batter into the prepared pan.
  • Add the strawberry jam to the remaining batter and mix until smooth.
  • Put dollops of the strawberry batter on top of the batter already in the cake pan. Use a butter knife and make a swirl pattern on top of the cake.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from oven and cool completely.
  • To make the frosting place the Cool whip and powdered sugar in a bowl and beat with a mixer on high speed for one minute.
  • Frost the entire cake with the frosting then sprinkle the strawberry crunch topping over top of it.

  1. I am a cottage law bakery so I cant use whipped cream. Do you think a thin layer of buttercream would taste ok?

    1. It won’t be totally the same but the strawberry crunch is what your customers will want to taste! I think it’ll be fine!
