Frozen S’mores

Frozen S’mores are the perfect way to enjoy your favorite treat in the summer when it’s too hot to have a campfire! Made with graham crackers, chocolate pudding, whipped topping, and marshmallow creme, they are sure to be your new favorite summer dessert.

S’mores are one of my all time favorite desserts because you can make them over a campfire, you can make then in the oven, or you can even make them in the microwave.   The combination of graham crackers, melted chocolate, and gooey marshmallows is perfection.

What are S’mores?

S’mores are a classic campfire treat that are popular in the United States. They consist of three ingredients: toasted marshmallows, chocolate bars, and graham crackers. The name “s’mores” comes from the phrase “some more,” which is their name because they are so delicious people often want to eat more than one.

While nothing can beat the actual campfire s’mores, I’ve made a lot of s’mores desserts and drinks that are still delicious.  Old Fashioned S’mores Fudge has all the flavors of s’mores and melts in your mouth.   S’mores Cookies actually sit on a graham cracker and are filled with chocolate chips and marshmallows.  S’mores Cupcakes are chocolate cupcakes filled with marshmallow cream topped off with buttercream frosting, chocolate sauce, and graham cracker crumbs. 

I’ve even gone so far as to make S’mores Hot Chocolate which is a decadent winter beverage.  My favorite oven s’mores are these Salted Caramel S’mores made indoors.

Since I love s’mores but sometimes think it’s a little too hot have one, I wanted to make Frozen S’mores.  Frozen s’mores are easy to make and stay fresh in the freezer so you can make a batch and enjoy them all summer long.

Why you’ll love frozen s’mores:

Frozen s’mores are easy to make.  Plus, this recipe makes 15 of them so you can serve them at a party, share them with your friends, or keep them in your freezer for a cool snack on a hot day. They have the same graham cracker, chocolate, and marshmallow flavor as the original s’mores. 

The chocolate layer of this dessert is made from chocolate pudding and frozen whipped topping.   The marshmallow layer is made from marshmallow creme, cream cheese, and whipped topping.   These layers are sandwiched in between graham crackers.

Ingredients for making Frozen S'mores.

Ingredients:

  • instant chocolate pudding mix
  • whole milk
  • frozen whipped topping (like Cool Whip)
  • graham crackers (I like the honey ones)
  • cream cheese (full fat version)
  • marshmallow creme (or marshmallow fluff)

To make the s’mores line a 9 x 13 baking dish with parchment paper, making sure enough hangs over the edges that you can remove the s’mores from the pan.

Break the graham cracker sheets in half.  Lay 15 graham cracker halves in the bottom of the pan.  Set aside.

In a large bowl combine the milk, chocolate pudding mix, and a half cup of the whipped topping.  Whisk until smooth.  Pour over top of the graham crackers in the pan.  Spread until smooth.  Freeze for 30 minutes.

Place the marshmallow creme, cream cheese, and remaining whipped topping in a large bowl.  Using a hand mixer beat on medium high speed until smooth.  Pour over top of the chocolate layer in the pan and smooth.

Put the remaining graham cracker halves on top of the marshmallow layer.   Freeze for at least 4 hours.

Remove from the freezer and use the parchment to remove from the pan.  Place on a cutting board.  Using a sharp knife slice into 15 squares.   Enjoy immediately or freeze.

How do I store Frozen S’mores?

To store frozen s’mores place each square on a piece of plastic wrap and wrap well.  Place wrapped s’mores in a freezer bag and freeze for up to 2 months.  When ready to eat remove from freezer, unwrap, and allow to thaw for 5 minutes before serving.

These frozen s’mores were so good!   The marshmallow layer stays a little bit soft while the chocolate layer hardens and tastes like a fudge bar.  The graham cracker stays fairly firm.  It’s really a delicious combination.

Ingredients

  • 1 5.9 oz package instant chocolate pudding mix
  • 2 1/2 c. whole milk
  • 2 1/2 c. frozen whipped topping like Cool Whip, defrosted
  • 15 graham cracker sheets broken in half
  • 6 oz. cream cheese
  • 6 oz. marshmallow creme

Instructions

  • Line a 9 x 13 baking pan with parchment paper leaving enough hanging over the edges to be able to pull the s’mores out after freezing.
  • Break the graham cracker sheets in half and put 15 of the squares in the bottom of the baking dish.
  • In a medium bowl combine the pudding mix, milk, and 1/2 cup of the whipped topping. Whisk until smooth.
  • Pour the chocolate mixture over top of the graham crackers in the pan. Freeze for 30 minutes.
  • In a large mixing bowl combine the remaining whipped topping, cream cheese, and marshmallow creme. Using a hand mixer, mix on medium high speed until smooth.
  • Pour the marshmallow layer over top of the chocolate layer and smooth.
  • Place the remaining graham cracker halves on top of the marshmallow layer.
  • Freeze for at least 4 hours.
  • Remove the s’mores from the pan using the parchment paper. Place on a cutting board. Cut into 15 squares.
  • Serve immediately or wrap and freeze for later.
