I know I’ve said it before but I have a hard time coming up with lunches.   During the week I work and usually only have 25 minutes for lunch so it has to be fast.   I usually eat leftovers, a Lean Cuisine, or I eat the school lunches.   I know some people are totally against school lunches but they actually have several that I enjoy.   I like popcorn chicken day because the cafeteria workers will make me a salad and put the chicken on top.   Same goes for taco day, they are happy to make us taco salads instead.   The other two days I’ll eat at school are pizza day and grilled cheese day.   There’s just something about grilled cheese sandwiches that I adore.

This weekend I went to the local produce store and bought a ton of local fruits and vegetables.   While there I noticed a rack of freshly baked bread.   I have a hard time resisting a fresh loaf of bread and it was baked in town at the Casselman Bakery.  The bread was super soft and fluffy but sturdy enough for sandwiches.   I bought a load on my way out.

Once home it was lunch time and I was in serious need of food.   The only problem was that I didn’t know what to make.    I often make a  grilled cheese sandwich which is good but boring.  This weekend I decided to take my grilled cheese to a new level.  I had several Kerrygold cheeses in the refrigerator and the aged cheddar was calling my name.  I love pairing apples with cheddar cheese so that was an easy pairing but the grilled cheese needed something else.   When in doubt go with caramelized onions I say!   Boy am I glad I did!  I put it all on the freshly baked bread and it was amazing!

The aged cheddar was sharp and gooey and worked so well with the sweet, crisp apples.    The caramelized onions added a ton of flavor to this sandwich and frying it up in the skillet made the bread toasted and delicious.   This is definitely a winning grilled cheese sandwich!

Grilled Cheese with Aged Cheddar, Apples, and Caramelized Onions

Yield: 2 sandwiches
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Grilled cheese isn't just for kids! Make this gourmet adult version using cheddar cheese, caramelized onions, and apples.


  • 2 T. butter, softened and divided
  • 1 sweet onion, thinly sliced
  • 1 t. brown sugar
  • 1 gala apple, thinly sliced
  • 4 oz. Kerrygold aged cheddar cheese, cut into slices
  • 4 slices of freshly baked sandwich bread


  1. In a small skillet heat 1 tablespoon of butter over medium heat. Add the onions and saute for 5 minutes. Add in the brown sugar, mix well, and continue to saute for 15 minutes or until the onions are caramelized. Remove from heat
  2. Using the remaining butter, butter one side of each of the four slices of bread. Place two slices in a large skillet over medium heat. Divide the cheddar cheese slices, the apple slices, and finally the caramelized onions between the two sandwiches. Top with remaining slice of bread.
  3. Heat for 3-5 minutes per side or until the bread is golden brown and the cheese is melted.
  4. Remove from the pan, slice in half and enjoy!
