Side dishes are one of those things where we have the same thing over and over again because I am not very creative about coming up with new ideas.  We generally rotate the same 4 or 5 starches and the same 4 or 5 vegetables.

I’ve been trying to get better about switching out our side dishes, especially the vegetables because it gets boring after a while.  Lately I’ve been trying to use cucumbers, mushrooms, and corn in different ways.

This week I’ve been focusing on mushrooms. I make Stuffed Mushrooms often but I don’t have too many other recipes. There is a Crispy Gnocchi with Mushrooms and Spinach recipe that I really enjoy.  I also make Pasta with Mushrooms, Bacon, and Corn. We often put mushrooms on our kabobs but I rarely make mushrooms as a side dish.

Today I wanted to try making roasted mushrooms.  I figured I could put them in a simple garlic butter sauce along with some fresh herbs.

What mushrooms are best for roasted mushrooms?

There are a few types you can use.  Baby bellas are great because they are flavorful, affordable, and become beautifully browned and tender when roasted. White button mushrooms are cheap, readily available, and have a mild flavor so they are a good choice too. Shiitake mushrooms have a more intense, earthy flavor with slightly crisp edges when roasted.

One thing to note is that mushrooms hold a lot of water so it’s good to cook the mushrooms first on their own to get the liquid out of them.  You may need to pour off some of the liquid or it may evaporate while you are roasting the mushrooms.

Once the mushrooms have roasted you can add the butter, seasonings, and herbs to the pan and cook a little longer or you can cook the butter, herbs, and seasonings on their own and simply toss with the mushrooms once they have finished cooking.

What herbs Pair well with mushrooms?

I used chives and thyme because that’s what I had in my garden.  However you can also use parsley, rosemary, or sage.  Use what is available to you and what flavors you like best.

Ingredients:

  • mushrooms (choose your favorite type)
  • olive oil
  • salt and pepper
  • salted butter
  • garlic cloves
  • fresh herbs (I used thyme and chives)
  • lemon juice

Don’t skip the lemon juice as it adds a nice brightness to the dish and really helps to make it taste finished.  Otherwise I find the mushrooms to be rather one note.

These mushrooms were super easy to make and they are tasty.  The butter, herbs, and lemon juice work together to make a nice little sauce that you can serve along with the mushrooms.

This is also a great side dish to serve family style because it looks pretty in a serving dish and then everyone can also pick how much of the sauce they want to pour over top of their mushrooms.

What can you serve with roasted mushrooms?

Roasted mushrooms are delicious when paired with chicken, pork chops, mashed potatoes, rice, polenta, or crusty bread.  They can even be roasted then tossed in a pasta dish.

While you can make roasted mushrooms up to one day ahead of time, they don’t take much time and are an easy side dish to make for the holidays or just an every day dinner.
