What foods do you think of when you think of fall?ย I immediately think of two foods:ย apples and pumpkin.ย These are the two foods that define fall flavor for me.
Sure there are squash, sweet potatoes, peaches, etc., but apples and pumpkin are the epitome of fall.ย ย This week Sunday Supper is celebrating fall with all of the Fabulous Fall Foods.
My only problem with this theme was deciding whether I wanted to use apples or pumpkin.ย I already had over 10 recipes pinned and ready to go.
The one that finally won out was this delicious Rustic Apple Pie.ย ย While you could definitely make your own pie crust, my favorite part of this recipe is how easy it is using refrigerated pie crust.
This pie is great because you don’t have to pre-bake the crust, you don’t have to shape it into a pan, and you can put just about any of your favorites spices in it.ย I chose to add nutmeg and cinnamon to mine along with a little bit of lemon juice and it was just delicious.
The crust came out crisp and golden brown.ย The filling was sweet and spiced and when it cooled it was super easy to cut and eat.ย This is the perfect taste of fall.ย ย Serve it warm with a scoop of ice cream or cold with a cup of coffee or apple cider.
Rustic Apple Pie
Ingredients
- 1 refrigerated pie crust
- 4 medium apples I used gala
- 1/4 c. sugar
- 2 Tablespoons flour
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 Tablespoon lemon juice
- 1 egg + 1 Tablespoon water
- sugar for sprinkling
Instructions
- Preheat the oven to 375 degrees.
- Unroll the pie crust and lay it on a cookie sheet. Set aside.
- Peel and core the apples. Cut them into thin slices.
- In a medium bowl toss the apples with the sugar, flour, cinnamon, nutmeg, and lemon juice. Mix until combined.
- Place the apple mixture in the middle of the pie crust. Gently lift the side and pinch to crimp. The side should come over the edges of the apples but should not meet in the middle.
- Beat the egg and water together. Brush on top of the crust and sprinkle with sugar.
- Bake for 25 minutes or until the crust is golden brown.
