Every December I make a ton of cookies.  I start early and make them all month long so that by Christmas I have quite the collection of cookies.   Usually I end up with 7 or 8 different kinds that I share with my friends at work and my family.

This year I haven’t been making nearly as many cookies.  I need to find some that are easier to make because the ones I normally make take way too long these days.  I still plan on making my traditional chocolate chip and oatmeal raisin because those don’t take very long but I wanted to make some different types as well.

There are only a few ingredients in these Cake Mix Christmas Cookies

I found a recipe for Cake Mix Christmas Cookies.  I’m not a huge fan of using mixes but in this case I decided to give it a go.  I bought a white cake mix and it only took a few extra ingredients to make these cookies.  I really liked that they are decorated on top with red and green sprinkles.

I wasn’t sure about adding the chocolate chips but they are a must.  I think they would have tasted too much like cake without them.  With the chocolate chips it made them much more cookie like.  I think you could use cinnamon chips as well if you wanted them more spiced.

The great thing about these is that while I made them for Christmas you can simply change the color of the sprinkles for different holidays.  Plus you can use different types of chips to make them taste different.  I bet using a chocolate cake mix would result in tasty chocolate flavored cookies too.  So many options!

Cake Mix Christmas Cookies

Ingredients

  • 1 box white cake mix
  • 2 eggs
  • 1/2 c. vegetable oil
  • 1 c. chocolate chips
  • 1/4 c. red and green sprinkles

Instructions

  • Preheat the oven to 350 degrees.
  • Combine the cake mix, eggs, vegetable oil, and chocolate chips and mix well.
  • Scoop the mixture into 1 1/2 inch balls and place 2 inches apart on a cookie sheet.
  • Press sprinkles on top of the cookies and bake for 10 minutes.
  • Allow to cool on baking sheet for 2 minutes then transfer to a wire rack.
