Hot Cocoa Cookies

Hot Cocoa Cookies are a rich, chocolate cookie topped with marshmallows and filled with more chocolate for the ultimate holiday cookie.

Every year when October hits I start looking for cookie recipes to make for the holidays.  I usually spend a month collecting recipes and then another month testing them out before choosing 5 or 6 that I actually make in December.

When I first saw these hot cocoa cookies they just looked so good!  It looked like a chocolate cookie with a marshmallow on top and was super cute. 

The thing I didn’t realize was that in addition to the marshmallow on top there’s also a piece of chocolate in the middle that melts so when you bite into it there’s a soft chocolate center. I was so excited to try them!

Ingredients:

  • butter
  • semisweet chocolate
  • flour
  • cocoa powder
  • baking powder
  • salt
  • brown sugar
  • eggs
  • vanilla
  • marshmallows
  1.  To make the cookie dough place the butter and chocolate in a heat proof bowl and microwave in 30 second intervals, stirring after each heating, until the chocolate is melted and smooth. 
  2. In a medium bowl whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl combine the sugar, eggs, and vanilla.  Mix well.  Add in the melted chocolate and mix until blended.
  4. Add the flour to the chocolate mixture and mix until just combined.
  5. Cover and chill the dough for at least 1 hour or overnight.

Making these cookies was fairly simple.   I like that the dough has to chill because that way I can mix up the dough one day and then just refrigerate it over night and make the actual cookies the next day.

The original recipe called for semisweet chocolate cut into small pieces but I found that a chocolate candy melt was the perfect size for these!  With all the other chocolate in the mix I thought it tasted good too so that’s what I used.

I only have mini marshmallows, can I use those?

You can place three mini marshmallows on top of the chocolate before pushing it onto the cookie.  It will take up about the same amount of space of the large marshmallows.

Can I use something besides the candy melts?

Yes!   Take your favorite chocolate candy bars and cut it into small 1/2 inch squares and use those in place of the candy melts.  You can also use a few chocolate chips in place of the chocolate.

How do you store these cookies?

I wait until the cookies have completely cooled.   Then I layer them with a piece of parchment paper in between the layers in an air tight container.   These will stay fresh for up to 1 week.

Do I have to use semisweet chocolate in the cookie batter?

No you don’t have to but you do need to use some type of sweetened chocolate that melts.  You can use chocolate bars, chocolate chips, or chocolate candy melts.   You can use bittersweet, semisweet, or even dark chocolate.  Use what you like!

These cookies are amazing.  I’m not a huge chocolate cookie fan but these are ones I could definitely eat again and again.  They aren’t huge so I didn’t feel like I was eating a ton of chocolate which was perfect. 

The marshmallow in the cookie breaks up the chocolate and gives the cookie a chewiness.  The melted chocolate adds a smooth texture in the middle of the cookie.

The cookie tastes like hot cocoa in a cookie form and is not only great for the holidays but all winter long!   So grab a bag of marshmallows and make these tasty treats!

Ingredients

  • 1/2 c. 1 stick butter
  • 20 oz. semisweet chocolate
  • 1 1/2 c. flour
  • 1/2 c. cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 c. brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 15 marshmallows

Instructions

  • To make the cookie dough place the butter and 12 ounces of chopped semisweet chocolate in a heat proof bowl and microwave in 30 second intervals, stirring after each heating, until the chocolate is melted and smooth.  Allow to cool for 10 minutes.
  • In a medium bowl whisk together the flour, cocoa powder, baking powder, and salt.
  • In a large bowl combine the sugar, eggs, and vanilla.  Mix well. 
  • Add in the melted chocolate and butter mixture and mix until blended.
  • Add the flour to the chocolate mixture and mix until just combined.
  • Cover and chill the dough for at least 1 hour or overnight.
  • Preheat the oven to 350 degrees. Line 2 baking sheets with parchment.
  • Scoop the dough out a tablespoon at a time and roll them into balls. Place 2-3 inches apart.
  • Bake for 10-12 minutes or until the tops of the cookies crack.
  • Meanwhile, cut the marshmallows in half and cut the remaining chocolate into small squares that will fit underneath the marshmallows.
  • Remove the cookies from the oven. Press each marshmallow half onto a chocolate square and push the chocolate square down into each cookie.
  • Place cookies back in the oven for 3 minutes or until the marshmallows soften.
  • Remove from oven and cool 2-3 minutes then remove to a wire rack to cool completely.
